Cheesy Paneer Tikka Parcels

Ingredients
  

For Parcel Covering

  • 1 Cup Whole Wheat Flour
  • ¼ Cup Semolina optional
  • ¼ Cup Oats Flour optional
  • ¼ Cup Milk Powder
  • ¼ Cup Yogurt/Curd
  • 1 Cup Milk for Buttermilk
  • 1 tbsp Vinegar(Apple Cider) or use any
  • 1 tsp Baking Powder
  • ½ tsp Baking Soda
  • 1 tsp Salt
  • 1 tsp Raw Cane Sugar/Honey
  • 2 tbsp Oil

For Quick Paneer Tikka Filling

  • 1 Cup Paneer/Indian Cottage Cheese cut into cubes
  • ½ Cup small cubed mixed bell peppers and onions optional
  • ½-¾ Cup Greek or Thick yogurt/Sour Cream or Mayonnaise or use as required
  • 1 tsp Garam Masala
  • 1 tsp Chaat Masala
  • 1 tsp Red Chilli Powder
  • ¼ tsp Turmeric Powder
  • ¼ tsp Ajwain Seeds
  • ¼ tsp Dried Mint Leaves optional
  • ½ tsp Dried Fenugreek Leaves/Kasuri Methi
  • Salt as per taste
  • 1 Cup Grated Cheese or as required

Instructions
 

Make Parcel Covering

  • Make buttermilk. Mix vinegar in milk and let it stand for about 5 mins.
  • In a mixing bowl, add all three flours along with milk powder, baking powder and baking soda and salt.
  • Then add yogurt and mix well and leave for 5 minutes.
  • Now add buttermilk and mix everything together.
  • Add oil now on the dough and knead it to soft and paliable dough.
  • Cover it damp muslin cloth and keep it to rest for at least 30 mins.

Make Filling

  • To make tandoori sauce, add yogurt in a bowl. Mix Chaat masala, Dried Mint leaves, Ajwain seeds about ¼ tsp of Salt, ½ tsp Red Chili powder, and ½ tsp of Kasuri Methi(dried fenugreek leaves). Reserve the leftover of spice powders for frying paneer.
  • In a pan heat oil, add garlic paste(optional), garam masala,turmeric powder, rest of the red chilli powder, fenugreek leaves and salt. Keep the flame to low.
  • Cook for a minute then add paneer cubes, nicely coat in spices. You can add a tbsp of tandoori sauce.
  • Add mixed bell peppers and onion cubes.
  • Add kasuri methi and salt and mix well.
  • Take out in a bowl and let it cool completely.

Make Parcels

  • Preheat, oven to 375°F or 190°C.
  • To make parcels, divide dough into 8-9 equal portions.
  • Roll out each portion thinly in a circular disc. Please refer the video.
  • Now as shown in video, fold the sides and make a triangular shape.
  • Spread some sauce and then add paneer cubes, sprinkle some cheese.
  • Then fold from the edges sealing it parcel form. Do it carefully, you can apply little water as the edges may open while the parcels are baking.
  • Brush with melted butter. You can add garlic powder, red chilli flakes and parsley(optional).
  • Bake in preheated oven for about 20 mins.
  • Once done, take out, brush with more butter and seasoning (C½haat masala or Italian seasoning) and serve hot.

Notes

You can substitute all the flours with All Purpose Flour(Maida). Or, use any of the flour combinations. Total flour used should be 1½ Cup.
Substitute for Yogurt-- 1/2 cup milk.
Milk Powder optional.
For filling you can skip Indian spices and add Italian seasoning.
Chaat Masala, Kasuri Methi/Dried Fenugreek Leaves are available at Indian Grocery stores.
You can use Pizza Dough (store bought or homemade) to make parcels in case you want to skip it making from start..
