Peaches are in abundance these days in stores. Great fruit to be used in cakes, crumbles or pies. Kids love peach crumble with vanilla ice cream. The weather here in my place is being extremely hot since last week. We are reaching towards the end of September and still having the temperatures in the 90s. Mornings are pleasant but the afternoon heat drains out all the energy from the body. All you need is some refreshing drink or fruits to cool your body and replenish the lost salts. During summers or on hot days like we eat plenty of watermelons( kid’s favorite!!), buttermilk(Indian Buttermilk/Chass) or fresh fruit juices to beat the heat. Due to so much of heat outside, I decided to make our Ginger Peach Iced Tea (as I had a good amount of peaches in my refrigerator) and thought of surprising her with her favorite Iced Tea. Flavoured Iced Tea cools and refreshes the body. Homemade Iced tea is always better than the bottled one as you can actually control the sugar added to it.I and my daughter loves iced teas and peach ginger iced tea is our favorite though she very rarely gets to drink iced teas as I avoid giving tea to her.
Our other favorite Iced is Mango that I make once in a while during summers when we get fresh and sweet mangoes but you can always make it with store-bought mango pulp or concentrate.
I made the Iced tea using Peach sugar syrup that can be used in so many other ways too!! I made Peach Lemonade for my little one who is quite young to have tea!! Making this syrup is very simple and quick process and you can store it for 3-4 days and use it in your lemonades, cocktails and use it in giving peachy flavor to your cakes.
Add sliced and pitted peaches roughly chopped ginger and sugar to water and boil for 2-3 minutes. Use ripe peaches. Then mash the peaches, let the flavor infuse. After 20-25 minutes, strain the mixture well. I strain all the pulp and leave aside the skins, it gives me a little thicker syrup. If you want it more clear, just strain the syrup and keep aside the mashes peaches to be used for crumble or desserts or you can eat it too!! Keep the syrup to cool and then refrigerate it if not using immediately. Stays good for 3-4 days.
Making black tea takes another 2-3 minutes. Just brew your tea using either tea bags or loose tea. Choose any tea of your choice. Brew it for 2-3 minutes only. We don’t want the bitter flavor in our iced tea. Add 3 cups of water to another pan, let it boil and then add tea bags(1) and let it infuse. After 2-3 minutes take out the tea bags and transfer the tea to a jar or pitcher and refrigerate.
To serve, in the serving glass, add some thinly sliced peaches, a thin strip of ginger, some ice cubes. Add tea and syrup. The ratio of tea to syrup depends on your taste. Serve immediately.
So when it is summers or still hot in your part of the world, do make some refreshing peachy iced tea, enjoy with grills, starters or have it just like that to quench your thirst.
Refreshing Ginger and Peach Iced Tea made with homemade Peach Sugar Syrup
- Ripe Peaches-3-4
- Ginger- 1/2 inch and few cut stripes for serving(optional)
- Water- 1Cup (for syrup) +3 -4 cups(Tea)
- Sugar-3-4 Tbsp
For Peach Syrup
- Boil water and sugar in a pan.
- When the peaches soften, switch off the flame, mash peaches and keep the pan covered for 20-25 minutes.
- Once cooled, strain the mixture and refrigerate.
For Iced Ginger Tea
- Boil water and ginger pieces in a pan, add tea bags or loose tea. Infuse for 2-3 minutes.
- Strain the mixture or take out the tea bags and refrigerate.
Once the tea and syrup are chilled, in serving a glass add few ice cubes, thinly sliced peaches,1 or 2 thin ginger strips(optional), iced tea and peach syrup.
Use the peach syrup for making lemonade, kids drinks or can be used for making mocktails and cocktails. Use any good Green Tea and make Ginger Peach Green Iced Tea.
