Kulfi is traditional Ice cream from Indian Subcontinent It is more dense than ice cream and can be made without an ice cream maker.
Traditionally, to prepare kulfi, milk is boiled till thick and creamy consistency . Then cream, chopped nuts, dried fruits, flavors(like rose and cardamom) and fruit purees are added accordingly.
Nowadays many quick versions of making Kulfis have come up. In busy life many people don;t have time to stand for long time in kitchen. People are always on lookout for recipes that quick and easy and also maintain the authentic traditional taste.
Usually we add cornflour/cornstarch to thicken it quick. But in case you run out or cornflour and don’t want to ad cream, you can still make the same creamy kulfi in a matter of few minutes.
Rabri is the thickened milk that we get after cooking milk for a long time. It is served chilled with nuts, cardamom flavor and fruits/fruit purees.

I was about to give up the idea of making anything, when my daughter asked can’t we have kulfi or rabri using it..And then I remembered, Chef Vikas Khanna recipe of kufli using oats that I saw on one of his TV shows .. I had quick rolled oats.. powdered it and made a few modifications then it was ready within minutes..
I chilled half of the dessert and relished as Rabri and half went into freezer.
