Gluten-free Sattu Cookies Recipe with Oats and Jaggery | Healthy and Nutritious Sattu Cookies
Here I bring you a very nutritious and healthy cookie recipe that you can make for your family. Made with healthy Sattu Atta/Roasted Bengal Gram and Oats Meal.
These soft GLUTEN- FREE cookies are guilt free made without any synthetic sugar and baking soda. These are on the softer side and as you take a bite these melt in mouth , so safely can be given even to your toddlers.
Perfect for all the age groups from toddlers to the seniors in the house. Taste is almost similar to Besan Badam Ladoos or Sattu Ladoos, only that it is much less in calories as Ghee used in these cookies is much less.
You can also pack these healthy cookies, in beautiful gift boxes and gift to your friends,especially those those on restricted gluten-free diet.
I made it for my family and my kids and parents enjoyed these a lot.
Baking with Healthy flour
Gone are the days when we used to bake with only all purpose flour. Now there are so many healthy flour options that you can use to bake delicious and nutritious treats for your family. All purpose flour(APF) has no nutritional value. There is no fibre so it is hard to digest, it slows down the system and thus the metabolism . Continuous use can lead to many health problems like obesity, high blood sugar and other digestive system related issues.
Choose your flour wisely as these are so many options available now. Instead of APF you can use a Whole Wheat flour that is one of the best and commonly available flour.
You can bake crispy and crunchy cookies with Chickpea Flour(Besan) – the popular Nan Khatai,

Benefits of Sattu Flour
Sattu is popularly known as Poor Man’s Food in Uttar Pradesh, Haryana, Bihar and Jharkhand. It is very budget friendly and very commonly available ingredient. It is called as the powerhouse of energy, a SUPERFOOD. Mainly consumed as a summer drink with salt, sugar/jaggery and lemon juice during hot and dry summers. The flour is also used as filling with onions, garlic and green chilies for stuffing in parathas or flour dumpling called litti. You can knead it in flour with coriander / fenugreek leaves to make Missi Roti. And now you can also bake cookies using it.
Sattu is highly fibrous protein rich flour. It is made by grinding roasted skinned chickpeas. It has cooling properties and is good for people with high sugar levels. Though summers are the best time to consume Sattu as it has cooling effect on body. But, you can have it anytime in combination with different herbs, flours.
Where to buy Sattu Flour
Sattu Atta /Flour is available at almost all the stores in Northern India. In other countries you find it at the Indian Grocery store with name Black Roasted Chana Flour.
You can also make it at home. Grind roasted chana to fine powder. Use the skinned ones or de-skinned ones.
Black Roasted Chana is mainly used as snack for munching with murmura… Checkout Chana Murmura recipe, a very healthy protein rich and fibrous snack for every age group.
Ingredients of Sattu Cookies
Other Flours used in the recipe are- Oats Flour and Almond Flour. You can make oats flour by grinding quick rolled oats. Almond flour is available at all the leading store. You can skip Almond flour with same amount of oats or sattu. Or, you can finely grind blanched almonds and add in the recipe.
For flavoring you can add cardamom powder, chai masala, vanilla essence or even garam masala if not making for kids. I have added FENNEL SEEDS as we love it’s flavor and these are good for the tummy too. You can add whole seeds or fennel seeds powder.
I have used JAGGERY POWDER here. You can use any raw sugar like coconut palm sugar. Even castor sugar can be added here if you want.
Healthy Sattu and Oats Cookies
- Mixing Bowl
- Coventional Oven/ OTG
- 1 Cup Sattu Atta/Roasted Gram Flour
- ¼ Cup Oats Flour or Rolled Oats
- ¼ Cup Almond Flour see notes
- ½ Cup Jaggery Powder or any Raw Sugar choose fine sugar
- ¼ Cup Melted Ghee/Butter
- 1-2 tsp Fennel Seeds
- ¼ Cup Milk or use as required
- 1-2 tsp Finely chopped nuts for garnish
- ¼ tsp Salt
- If using rolled oats, grind to fine powder.
- In a mixing bowl beat ghee and jaggery till smooth mixture.
- Add sattu flour, oats and almond flour, fennel seeds and fold in the ghee and jaggery mixture.
- Add milk little by little tbsp of milk to bind the mixture. Use milk as required.
- Fold lightly with hands and then cover the with cling film or a lid.
- Let the dough rest for 30 mins. You can refrigerate it overnight.
- When ready to use , take out from refrigerator and preheat oven to 350°F 180°C for 10 mins.
- Make lemon sized balls. Flatten a bit and arrange on the baking tray lined with parchment paper.
- Add finely chopped nuts/almonds and press lightly on the cookies.
- Lower the temp. of oven to 170C or 370F. Bake in preheated oven for about 18-20 mins or till the sides of cookies start to light brown.
- Leave on the tray and cool completely.
- Warm cookies are very soft and can crumble when lifted from tray , so handle very carefully.
- Once completely cool, store in an airtight container and enjoy with milk /tea or coffee.
