Creamy rich milk pudding with goodness of sweet apples and raisins, thickened with almond flour for a quick and delicious dessert for get togethers or fasting days and festivals like Navaratri.
Take a heavy bottomed pan, add milk and boil on medium flame. Once first boil comes, simmer flame and let it cook for 10 minutes.
Add almond flour and mix it. Keep on stirring in between so that milk doesn't get burned at bottom. add raisins to it.
Meanwhile peel and grate 2 apples(medium sized), and in another non-stick or heavy bottomed pan add very few drops of desi ghee, and sauté grated apple to it. Cook for 2-3 minutes. You can skip ghee and cook apples without it too.
Once milk starts to thicken , add cooked apples and sugar to it. Mix well and let it cook for another 5 mins.
Garnish with more chopped nuts like almonds and cashew nuts.
Transfer to a serving bowl and refrigerate once it cools completely.
Serve it chilled topped with finely chopped nuts like almonds and cashew nuts or more finely chopped apple pieces.
