Instructions
Make Papdi
Take flour, cumin seeds and salt in a bowl.
Mash the potato/es and add to flour.
Knead flour with lukewarm water, adding little water at a time. Knead into a soft dough.
Divide dough into equal sized portions big enough to roll into an 8" diameter disc. Using a 2" cookie cutter cut into smaller discs/circle. These are our papdi. Roll out a thin disc as we want the papdis to be crispy.
Heat oil in a heavy bottomed pan and fry papdis till done or start turning brown. Set aside for making chaat.
Assemble Papdi Chaat
Take boiled potatoes and add roasted cumin powder, little salt, some chopped green chillies(optional) and mix.
In a bowl take curd/yogurt add some sugar to it and mix until smooth.
Arrange 4-5 papdis in a plate put some potato mixture on the papdi.
Add the chutneys and curd/yogurt on the papdi and potato mixture.
Crush some crispy papdi on it and serve. You can also garnish it with pomegranate seeds and some fresh chopped coriander/cilantro.
To Bake/Air Fry Vrat Ki Papdi
To bake these gluten-free papdi. Just add a tsp of ghee or oil to the flour when kneading and bake in a pre-heated oven at 400°F/200°C for 7-8 minutes.
To make in Air Fryer, pre-heat the air fryer. Arrange rolled papdis in the air fryer basket. Air Fryer at 400°F/200°C for 7-8 minutes
