Take boiled potatoes and peel it.
3-4 Medium Boiled Potatoes
Mash it coarsely. Do not make it pasty.
Puree tomatoes, ginger and green chillies.
2 Medium Tomatoes, 1-2 Green Chillies, Small Ginger piece
Heat oil in a kadhai or pan.
2 tbsp Mustard Oil or Desi Ghee
Add hing and cumin seeds.
¼ tsp Hing/Asafetida, ½ tsp Cumin Seeds
When cumin crackles, add tomato puree.
Cook tomato puree for 1-2 mins.
Add spice powders, mix and cook it till oil separates.
1-2 tsp Coriander Powder, ½ tsp Turmeric Powder, ½-1 tsp Kashmiri Lal Mirch/Red Chilli Powder, Salt to taste
Add mashed potatoes, salt to taste and add water as per desired consistency.
Cook for 1-2 mins. Garnish with chopped coriander.
Fresh Coriander for Garnish
Serve hot with Poori or parathas.
