Aloo Tamatar Ki Sabji

Aloo Tamatar, simple and easy to make No Onion Garlic curry with potatoes and tomatoes. This curry can be made for everyday meals and for auspicious occasions, festivals and parties. Served with Indian flatbreads like Poori, different types of paratha and chapati.

  • Grinder for tomato puree
  • Measuring Cups and Spoons

Ingredients
  

  • 3-4 Medium Boiled Potatoes
  • 2 Medium Tomatoes
  • 1-2 Green Chillies
  • Small Ginger piece
  • ¼ tsp Hing/Asafetida
  • ½ tsp Cumin Seeds
  • 1-2 tsp Coriander Powder
  • ½ tsp Turmeric Powder
  • ½-1 tsp Kashmiri Lal Mirch/Red Chilli Powder
  • Salt to taste
  • 2 tbsp Mustard Oil or Desi Ghee
  • Fresh Coriander for Garnish

Instructions
 

  • Take boiled potatoes and peel it.
    3-4 Medium Boiled Potatoes
  • Mash it coarsely. Do not make it pasty.
  • Puree tomatoes, ginger and green chillies.
    2 Medium Tomatoes, 1-2 Green Chillies, Small Ginger piece
  • Heat oil in a kadhai or pan.
    2 tbsp Mustard Oil or Desi Ghee
  • Add hing and cumin seeds.
    ¼ tsp Hing/Asafetida, ½ tsp Cumin Seeds
  • When cumin crackles, add tomato puree.
  • Cook tomato puree for 1-2 mins.
  • Add spice powders, mix and cook it till oil separates.
    1-2 tsp Coriander Powder, ½ tsp Turmeric Powder, ½-1 tsp Kashmiri Lal Mirch/Red Chilli Powder, Salt to taste
  • Add mashed potatoes, salt to taste and add water as per desired consistency.
  • Cook for 1-2 mins. Garnish with chopped coriander.
    Fresh Coriander for Garnish
  • Serve hot with Poori or parathas.
