Watermelon Feta Salad is a refreshing summer salad made with sweet juicy cubes of watermelon, salty crumbled feta cheese in lemon and herb dressing.

Equipment

  • Mixing Bowl for salad and dressing
  • Small Whisk
  • Knife

Ingredients
  

  • 3 cups Watermelon Cubes
  • ¼ cup Feta Cheese
  • Fresh Basil and Mint Leaves

Dressing

  • 2 tbsp Extra Virgin Olive Oil
  • 1 Lime Juice
  • Balsamic Vinegar
  • ¼ tsp Salt or as required

Instructions
 

Make Dressing

  • In a small bowl/cup add all the ingredients listed under the dressing section.
    2 tbsp Extra Virgin Olive Oil, 1 Lime Juice, Balsamic Vinegar, ¼ tsp Salt
  • Take watermelon cubes in a bowl.
    3 cups Watermelon Cubes
  • Roughly tear the mint and basil leaves.
    Fresh Basil and Mint Leaves
  • Lightly mix the salad coating the cubes in dressing.
  • Add crumbled cheese and mix lightly.
    ¼ cup Feta Cheese
  • Chill for at least 30 mins. and serve.

Notes

How to choose Watermelon for the Salad
    • Watermelon should be heavy as compared to it's size. It will have more water content and will be more juicy.
    • A naturally ripened watermelon has yellow spot or field spot.
    • Tap the melon it should give a deep sound. Though it may take some practice to get the sound right. A hollow sound indicates dry and less juicy melon.
Tips to make best Watermelon Feta Salad
  • Try to use seedless watermelon or take out seeds. It won't be a pleasant experience biting into the seeds.
  • Use chilled watermelon or cube the meon and use it chilled.
  • Also, chill the salad before serving. Do not keep it for long before serving. Add dressing half an hour before serving as fresh basil/mint may blacken when kept for long.
