Ingredients
  

  • 1 cup Noodles or as required check notes
  • 1 Onion(small)
  • 2 Tomato (smal) or 2 tbsp tomato puree
  • 4-5 Garlic cloves
  • 1" Ginger Piece
  • 1-2 Red Chillies(fresh/dry) optional and depending on spice tolerance
  • 1 tsp Soy Sauce
  • 1/2 tsp Garam Masala optional
  • Freshly Ground White Pepper To taste
  • 2-3 Cups Mixed vegetables(Shredded Cabbage, Carrots, Mushrooms, Bell Peppers) or any other seasonal vegetables you like to add
  • 4-5 Cups Vegetable Broth
  • 1-2 tsp Oil
  • Salt to taste

For Garnish

  • Spring Onion Greens for garnish
  • Chilli Oil/Spicy Red Chilli chutney for topping while serving

Instructions
 

Prepare Noodles

  • Boil noodles as per the package instructions.
    1 cup Noodles or as required

Prepare Vegetables

  • Finely chop onion and tomato. Make a coarse paste of ginger, garlic and red chilli.
    1 Onion(small), 2 Tomato (smal), 4-5 Garlic cloves, 1" Ginger Piece, 1-2 Red Chillies(fresh/dry)
  • Chop vegetables as per the size your like. You can cut in thin strips or cubes.
  • Make masala with onion, tomato, ginger garlic and chillies.
  • Heat oil in a pan and add coarse paste of ginger garlic and chilli. Saute till raw smell of garlic goes away. Do not overcook the paste.
    1-2 tsp Oil
  • Now add finely chopped onions and saute till it starts turning light pink. Add chopped tomatoes and cook till it is soft and mushy.
  • Cool the masala and puree it. Alternatively you can skip grinding the masala and continue making the soup. But, I like to grind the onion tomato masala.
  • Now transfer the masala back to pan, add some veg.stock or water and cook for few seconds.
  • Mix garam masala and salt. Yo can add red chilli powder for more spicy soup, if you are not going to use chilli oil for garnish.
    1/2 tsp Garam Masala, Salt to taste
  • Now,add cut mushrooms and cook for few seconds.
  • Add Veg. stock or water and let it come to boil.
    4-5 Cups Vegetable Broth
  • Gradually add other vegetables and cook for 1-2 mins. Do not overcook as the vegetables will lose the crunch. add more stock if required.
    Freshly Ground White Pepper, 2-3 Cups Mixed vegetables(Shredded Cabbage, Carrots, Mushrooms, Bell Peppers), 1 tsp Soy Sauce
  • Cook for few minutes until the soup boils. Add spring onion greens after switching off the gas.

Assemble and Serve Soup

  • Divide noodles in serving bowls or soup bowls, add soup, garnish chilli oil/spicy chilli chutney.

Notes

For Gluten-free Thukpa recipe use gluten-free noodles and gluten-free soy sauce/tamari sauce.
Skip mushroom in the recipe if you are allergic to it
You can make a big batch of onion tomato masala(increase the quantity of ingredients) and store. Use 2-3 tbsp masala to make fresh soup.
