Apricots, Fig and Nuts Energy Bites
Quick and Easy 5 minutes Vegan and Gluten-free, Energy bites with Dried fruits like Apricot, Figs and Nuts
- ½ Cup Dried Apricots
- ½ Cup Dried Figs
- ¼ Cup Almonds
- ¼ Cup Cashew Nuts
- ¼ Cup Pistachios
- ¼ Cup Coconut flakes
- 1 tsp Fennel Seeds
- ¼ Tsp Cardamom Powder/Seeds
In a blender add figs, apricots, pulse till it breakdowns smalls bits.
Add nuts, cardamom seeds/powder, fennel now and pulse again.
Make a coarse paste of the whole mix.
Take out in dish or plate.
Add half of coconut flakes in the mixture. Mix it nicely.
Make small lemon sized/bite sized balls.
Take the rest of coconut flakes in a plate and roll the balls, coating nicely.
Keep in an air tight container and enjoy as and when you want!!
Substitutes for the ingredients-- The recipe if very adaptable and you can conveniently substitute nuts used in the recipe as per your preference.
Dates can be used in place of figs.
If skipping figs , you can add a tbsp of Chia seeds for the crunch.
If you have nut allergies, you can skip those and add seeds like pumpkin and sunflower seeds.
