Apricots, Fig and Nuts Energy Bites

Ingredients

  • ½ Cup Dried Apricots
  • ½ Cup Dried Figs
  • ¼ Cup Almonds
  • ¼ Cup Cashew Nuts
  • ¼ Cup Pistachios
  • ¼ Cup Coconut flakes
  • 1 tsp Fennel Seeds
  • ¼ Tsp Cardamom Powder/Seeds

Instructions

  • In a blender add figs, apricots, pulse till it breakdowns smalls bits.
  • Add nuts, cardamom seeds/powder, fennel now and pulse again.
  • Make a coarse paste of the whole mix.
  • Take out in dish or plate.
  • Add half of coconut flakes in the mixture. Mix it nicely.
  • Make small lemon sized/bite sized balls.
  • Take the rest of coconut flakes in a plate and roll the balls, coating nicely.
  • Keep in an air tight container and enjoy as and when you want!!

Notes

Substitutes for the ingredients-- The recipe if very adaptable and you can conveniently substitute nuts used in the recipe as per your preference.
Dates can be used in place of figs.
If skipping figs , you can add a tbsp of Chia seeds for the crunch.
If you have nut allergies, you can skip those and add seeds like pumpkin and sunflower seeds.
