Equipment

Ingredients
  

  • ¾ Cup Rice
  • ¼ Cup Dhuli Moong Dal/ Lentil
  • ¼ Cup Chilka Moong Dal
  • ¼ Cup Malka Masoor/Red Lentils
  • 1 Cup Chopped Spinach
  • 1 cup Mixed veggies(Carrots, Beans, Peas, Potatoes)
  • 1+1 tbsp + tsp Ghee/Oil
  • small Ginger piece
  • 1-2 Green Chillies
  • a pinch Hing
  • 1 tsp Cumin Seeds
  • ¼ tsp Turmeric Powder
  • Salt as per taste

Instructions
 

  • Wash rice and all the lentils nicely.
  • Soak in enough water for about 10-15 mins.
  • Finely chop vegetables (carrots, beans, cauliflower, potatoes) whatever you are using.

Indian Pressure Cooker Recipe

  • In pressure cooker, heat oil on medium flame. Add hing and cumin seeds once seeds crackle add mixed vegetables.
  • Sauté for 1-2 mins. Add finely chopped spinach leaves.
  • Drain water from soaked Khichdi. Add khichdi to pressure cooker.
  • Add turmeric powder, salt and then ad water. About 3-3½ cups water for 1½ Cup of Khichdi. Adjust water as per the consistency you prefer.
  • Close the lid and cook for 2 whistles on medium flame and then 5-6 mins on low flame.
  • Switch off the flame and wait for the pressure to go off.
  • Open the lid and check the consistency of khichdi. You can add more water if you want thinner consistency.

Instant Pot Method

  • Switch on the Instant Pot to SAUTE Mode for 10 mins..
  • Add ghee/oil. Once the display shows HOT. Add hing and cumin seeds once seeds crackle add ginger chilli paste, sauté for a while.
  • Add mixed vegetables, sauté for a few seconds, then add chopped spinach.
  • Drain water from soaked Khichdi. Add khichdi to pressure cooker.
  • Add turmeric powder, salt and then ad water. About 3-3½ cups water for 1½ Cup of Khichdi. Adjust water as per the consistency you prefer.
  • Cancel the SAUTE Mode. Close the lid and then set the PRESSURE COOK Mode for 10 mins. Press the START button.
  • Let the Khichdi cook. Once the timer goes off, wait for 2-3 mins.
  • Then do Quick Release Pressure(QRP).
  • Open the lid and check the consistency of khichdi. You can add more water if you want thinner consistency.

Prepare Tadka

  • In tadka pan or small pan, add ghee as required about 1tsp, add cumin seeds once seeds crackle, add whole red chilli.
  • Transfer the tadka to khichdi.
  • Top with Sesame Seeds for the auspicious occasion of Makar Sankranti.(Optional)
  • Serve hot with curs/raita of choice, papads, salad ad chutney or pickle.

Notes

We can't think of having Khichdi without Ghee but Vegans can substitute it with any flavourful plant based oil. Also, you can avoid tempering/tadka for low oil/ghee Khichdi.
