Equipment

  • Kadhai for Frying

Ingredients
  

For Outer Flaky covering/Dough

  • 1 Cup Flour Whole Wheat Flour or Maida
  • ¼ tsp Ajwain/Caraway Seeds
  • 2 tbsp Ghee/Oil
  • ½ tsp Salt or as required

For Filling

  • ½ Cup Ganthia/Sev/Bhujiya
  • 10-12 Almonds
  • 10-12 Cashew Nuts
  • 10-12 Raisins
  • 1 tbsp Coriander Seeds
  • 1 tsp Fennel Seeds
  • 1 tsp Sesame Seeds
  • ½ tsp Red Chilli Powder or as required
  • 1 tbsp Oil
  • 1 tbsp Tamarind Chutney
  • Salt as required

For Frying

  • Oil as required

Instructions
 

For Outer Flaky covering/Dough

  • To make dough, add salt, caraway seeds and oil in flour.
  • Rub oil in flour to get a coarse consistency.
  • Knead a tight dough using lukewarm water. Add water little by little while kneading the dough.
  • Cover and set aside for about 10-15 mins.

Make Filling

  • Finely chop dry fruit or use a grinder and pulse to get a coarse mixture.
  • Do not overdo as the nuts will release oil and form nut butter.
  • Next, grind the sev/ganthia to coarse mix. Pulse 1-2 times.
  • In a dish/plate mix nuts, ganthia, fennel seeds, sesame seeds, red chilli powder, salt(as per taste/required) and oil. Mix well.

Make Kachoris

  • Divide dough in tennis ball sized portions.
  • Divide the filling into a bit smaller portions than the dough.
  • Roll out into a small circular disc.
  • Place the filling on the rolled dough and seal the edges nicely and give round shape.
  • Shape all the kachoris in similar way.

Fry Kachoris

  • Heat oil in a kadhai or heavy bottomed pan.
  • Drop a very small piece of dough in oil. It should rise very slowly. Oil is ready for frying.
  • Fry all the kachoris on low medium flame.
  • Do not overcrowd the kadhai with kachoris. When kachoris turn light golden brown take out on a kitchen towel.

To Air Fry Kachoris

  • Preheat Air Fryer for 5 mins at 180°C or 350°F.
  • Brush kachoris with oil.
  • Air Fry for 10 mins. Lightly brush again.
  • Air Fry again for 5 mins.

To Bake Kachoris

  • Preheat oven/otg for 5 mins at 180°C or 350°F.
  • Bake 10 mins. Lightly brush again and bake again for 5 mins or till the kachoris are light golden brown.
  • Cool completely and store in an air right container.

Notes

Use any of these namkeen to make the filling. Many people add roasted besan/chickpea flour but using bhujiya/ganthia makes a real difference to the taste filling.
I have used Whole Wheat Flour, you can use Maida/All Purpose Flour or a combination of both.
Fry all the kachoris on low medium flame . On high flame kachoris will cook form outer side but will remain uncooked from inside and you won't get the perfect flaky texture. Do not overcrowd the kadhai with kachoris.
Substitute Tamarind Chutney with a tsp of sugar and a pinch of citric acid.
