Pineapple and Mint Lassi

Sweet and Tangy Lassi with fresh Mint leaves and pineapple slices. An absolute summer thirst quencher with the goodness of yogurt, pineapple and mint, to keep the body light and cool from scorching summers.

Ingredients
  

  • 2 Cups Yogurt/Curd/Dahi
  • 1 Cup Pineapple Pieces
  • Handful of Fresh Mint leaves(10-12)
  • 1/4 tsp Chaat Masala
  • Sugar/Sweetener as required
  • Chilled Water as per required consistency of Lassi

Instructions
 

  • In a blender, add yogurt, pineapple pieces, mint leaves. Add sugar if using.
  • Add water as per required consistency.
  • Blend till smooth consistency.

Notes

Why should we cook pineapple before adding to yogurt or milk
If you are planning to keep the lassi for a couple of hrs then, cook the pineapple pieces in half cup water and 1 tsp sugar. Cool it completely and make lassi/smoothie.
Fresh pineapple when added to milk or curd/yogurt may turn bitter curdle the dairy product. It is due to the bromelain enzyme present in the fruit. The enzyme acts on the milk protein and breaks it down which may result in bitter taste or curdle the  dairy product(milk/yogurt).
So, add fresh pineapple pieces when having the lassi immediately after making it. Else cook it before adding.
