Cheese Chilli Toast Recipe | How to make Café Style Cheesy Chilli Cheese Toast in Oven and on Tawa
Café Style Cheese Chilli Toast for breakfast, quick snacking, parties. One of the easiest toast recipe with lot of variations that you can make in jiffy. With couple of basic ingredients in your pantry, make the yummiest most cheesy toast and enjoy with your loved ones.
Kids sudden hunger pangs or sudden arrival of guests these cheesy toasts are one of the best and fuss free to make. The warm spicy toasts are so comforting for any time of the year especially chilly winter evenings or rainy days. Even on hot summer days these are perfect with a cup of chilled COLD COFFEE !!
You can make this cheesy toast in toaster, grill or bake in oven. Or, simply on the griddle or tawa or even in your conventional microwave oven.
Ingredients for Cheese Chilli Toast
Bread- Choose any good quality bread. I can be 1-2 days old. White bread, Brown bread, multigrain or any kind of bread will be okay to use.
Cheese- You can any cheese that melts nicely. I have used a combination of Cheddar Cheese and Mozzarella Cheese. In India the cheese sold with the name of Pizza Cheese(which is mozzarella cheese) can be used with processed cheese. Provolone, Monetery Jack
Herbs- Fresh green chilies are used in restaurant style cheese chilli toast. But you can add red chilli flakes instead of green chilies.
When we have cheese in the recipe, how can we not use garlic. It is a flavour enhancer for recipes with cheese. Use fresh garlic or garlic powder.
I also like to add very small amount of ginger and about a tbsp fresh coriander leaves. It a very flavourful variation of the chilli toast that is served in restaurants. You can always skip any of the ingredient as per your preference.
When making for kids skip or adjust the amount of chilies are per your requirement.
Butter- Prefer butter while making the toast. It adds a lot of flavour and crispiness. Also, use salted butter. If adding unsalted butter add about 1/4 tsp to cheese mixture.
No salt is required here as cheese and butter used in the recipe already have salt.
Others-- I also add very finely chopped bell peppers if available. These add a nice crunch and give a beautiful colored look to the toast
Variations for the Cheese Chilli Toast
For variations you can add sweet corns, finely chopped onions which go very well with cheese.
Add any kind of seasoning. Oregano or dried basil, Mixed herbs, Italian, Peri Peri or even Indian Chaat Masala, for the Masala Cheese Chilli toast.
You also can make CHEESE CHILLI SANDWHICH using two breads in a sandwich maker or in panni press.

Usually people add chopped chilies in cheese toast. Since I make it for my kids also, I coarsely grind garlic, ginger and green chilies in mortar and pestle.
Then mix it with cheese, butter, if using any veggies and adding any other seasoning.
For prefect crispy with melting cheese toast, very lightly toast bread from one side.
Then apply the cheese mixture on the toasted side. Prepare all the toasts in similar ways.
When making it in oven/ otg preheat the oven for 5-10 mins, and then bake the toasts for 5 mins at 180 C.
On hot griddle cover and cook till cheese melts. Keep the flame to avoid burning of the the toast from bottom.
Please Note-- When baked in oven or otg, the melted cheese will have a brown hue. Since temp. is not very high while cooking on griddle cheese may not turn brown. It will have a very light brown hue.
Also, if adding onions and bell peppers chop it very finely. The big pieces don't look good on small toasts.
Can I make ahead Cheese Chilli Toast
Baked Cheese Chilli toast won't taste that good as the fresh hot ones. Though you can make it and pack for your picnic parties or kids lunch box. These taste best when served freshly baked or cooked with melting cheese.
You can prepare the toasts a few hrs ahead with toppings and then bake/cook on griddle while serving.

Equipment
- Oven/OTG
- Griddle
Ingredients
- 5-6 Bread Slices
- 1 Cup Grated Cheese (Mozzarella + Cheddar)
- 2 +1 tsp + tbsp Butter
- 3-4 Garlic Cloves
- Fresh Ginger(½" piece)
- 1-2 Green Chillies or as required
- 2 tbsp Finely chopped Coriander/Cilantro optional
- 2 tbsp Finely chopped Bell Peppers optional
- 1 tsp Crushed Black Pepper
- Chilli flakes as required see notes
Instructions
- Make paste of ginger garlic and green chili. Use mortar pestle . You can use store bought ginger garlic paste and chop green chilies. Bu fresh ingredients give much more flavour.
- In a bowl add ginger garlic and green chilli paste., cheese, 2 tsp butter, black pepper, chopped cilantro and bell peppers.
- Mix all the ingredients very nicely.
- Take the bread slices and cut the sides.
- Apply very little butter on one side.
Cook Cheese Chilli Toast on Tawa/Griddle
- Heat a griddle and lightly toast the buttered side. Keep a check on the flame, it should be low to medium else bread may burn.
- Once the slices are toasted, take off from the griddle and carefully apply the cheese mixture on the toasted side.
- Now again switch on the gas and lightly butter the griddle/tawa.
- Carefully transfer the slices on it.
- Keep the flame low and cover the slices. Cook till cheese melts.
- Take of the heat. Cut diagonally.
- Serve hot with your favourite coffee or milkshake.
Cheese Chilli Toast in Oven/OTG
- Preheat oven to 180°C for 10 mins.
- Bake toasts for 5-8 mins at 180°C.
- Cut diagonally and serve hot.
