Are you in a mood for something fresh, light and flavourful!! Beaming with fresh spring and summer flavours..Though my part of the world is still cold and chilly,we are still having heavy snowfall. I think, now we have had too much of snow and cold.. . Last week Viraj(my seven yr old) gave us the news that the 'groundhog' had seen it's shadow and there is prediction of early spring.. but when???.. Still so much of heavy snow and below freezing temperatures. We are waiting for the spring to arrive, some sunshine is desperately needed!! Today, after the late lunch of Kadhi -Rice(Yogurt based Curry and Rice), we had a light dinner of Thin Crust Pizza for kids with Hot Chocolate. I and Rajeev had this Greek Salad with garlic bread.
What is Greek Salad..
Greek Salad as the name suggests is from the Greek/Mediterranean Cuisine. The salad consists of fresh cucumbers, tomatoes, olives, red onions, green capsicum and feta cheese which form an essential part of the Greek vegetarian Diet. The fresh veggies tossed together in an olive oil dressing, seasoned with oregano, red chilli flakes, fresh garlic, sugar and salt.
A no fuss salad recipe that needs just cutting of veggies and tossing together in the dressing. For the slight sweet touch, I added maple syrup instead of sugar. Pomegranate balsamic vinegar that I picked from Whole foods Market inplace of Red Wine Vinegar. Usually, red wine vinegar added to the greek salads. I added some fresh lettuce also. To make the dressing, I used a Mediterranean seasoning that has mixed herbs like oregano, garlic, salt and chilli flakes. For the dairy free version skip feta. Add boiled chickpeas for a vegan version. The salad goes well as a side to your favourite dinner options.It can also be enjoyed on its own with some garlic bread(like we had) or pizza..

Refreshing Greek Salad
Ingredients
- 1 Cup Cucumbers
- 1/2 Cup Tomatoes
- 1/4 Cup Kalamata Olives
- 1/2 Cup Feta Cheese
- 1/4 Onion
- 1/4 Green Bell Pepper
- Flat Leaf Parsley
For Olive Oil Vinaigrette
- 1/4 Cup Extra Virgin Olive Oil
- 2 Garlic Cloves
- 1 tsp Oregano
- 1 tsp Red Chilli Flakes
- 1 tsp Maple Syrup or Sugar
- Salt to taste
Instructions
- Wash the tomatoes and cucumbers and dice into cubes.
- Finely chop onions and cut green capsicum into thin strips. Cut Olives in half.
- Mix together the salad veggies and cucumber in a salad bowl.
- Toss together with the vinaigrette.
- Add feta and lettuce before serving.
Prepare Olive Oil Vinaigrette
- In a bowl, take extra Virgin Olive Oil, mix in the herbs, minced garlic, maple syrup/sugar and salt. Store or use as required.
Notes
- Lettuce leaves wilt when added to salads. Add lettuce just before serving.
- Wash cut onions well before adding to salad, to get rid of the sharp taste of onions.
- I used cherry tomatoes for the salad. You can use any firm tomatoes for the salad.
Make this salad whenever in a mood to have something light and refreshing. For me it goes best with tossed bread or croutons.
