Avocado Salad made with creamy avocado, cherry tomato and cucumbers, is a perfect side with your meals. It is easy and quick to make and you can adapt/add ingredients as per your likes.

Ingredients
  

  • 1 Ripe Avocado
  • 1 cup Cherry Tomatoes or 100 gm
  • 1-2 Cucumbers English/Persian or any local variety
  • 1 medium Red Onion
  • Mixed fresh herbs as per preference Cilantro/Mint/Basil/Dill/Parsley

Salad Dressing

  • 1 Juice of Lemon/Lime or used as required
  • 2-3 EVOO
  • 1 tsp Dried herbs as preferred
  • 1 tsp Sweetener Maple/Honey/Brown Sugar/JAggery powder
  • Chilli Flakes as required
  • ½ tsp Black Pepper Powder
  • Salt as required

Instructions
 

  • Cut the avocado vertically from center. Lightly twist and open the cut avocado. Discard the seed. Cut in cubes or vertically as you like it.
    1 Ripe Avocado
  • Chop cucumbers. Keep the peel else discard if it is thick. Also, discard the large seeds.
    1-2 Cucumbers
  • Cut cherry tomatoes in half or you can keep it whole. Cut the big tomatoes in bite size cubes. Discard the extra pulp and seeds.
    1 cup Cherry Tomatoes
  • Cut onions and soak it in water for 10 mins., this makes it more crisp and also takes out the bitterness from onion.
    1 medium Red Onion
  • Chop the fresh herbs and add.
    Mixed fresh herbs as per preference
  • Make dressing. Whisk together all the ingredients listed under dressing. Add salt and chilli flakes as per taste.
    1 Juice of Lemon/Lime, 2-3 EVOO, 1 tsp Dried herbs, 1 tsp Sweetener, Chilli Flakes as required, ½ tsp Black Pepper Powder, Salt as required
  • Add dressing to salad and mix lightly. You can chilli salad for few hrs before serving.
  • Store in an airtight container or cover the salad bowl with a cling film.

Notes

For Vegan Avocado Salad skip honey and add other sweetener as mentioned in ingredient list.
Use any of the fresh herbs as mentioned in the ingredient list.
Add  any source of protein like chickpeas, black/red beans, mango, for variations .
Make a mini meal bowl with quinoa and beans.
You can also try Indian Chaat masala in dressing for flavour variation. 
Refrigerate the leftovers and  finish by the next day.
Do not make it ahead of parties or lunch, add dressing and keep it refrigerated in an airtight container or salad bowl covered with cling film. This will help in avoiding the browning of cut avocado.
