Ingredients

  • 1/2 Cup Wheat Daliya/Broken Wheat
  • ΒΌ Cup Jaggery Powder or any sweetener as per taste
  • 2 Cups Milk
  • 1/4 Cup Finely Chopped Nuts and Raisins
  • a pinch Cardamom Powder/Nutmeg Powder optional

Instructions

Daliya in Open Pan

  • In a pan add daliya, roast it on medium heat, till it gives a nice nutty aroma and starts turning light brown in color.
  • In another thick bottomed pan, boil milk on low flame.
  • Once it starts to boil, add daliya and finely chopped nuts and raisins. Mix well.
  • Cook on low flame till the porridge starts getting thick in consistency. Daliya grains will also become soft and cooked with boiling milk.
  • Once you get the desired consistency, add sweetener and mix well. Boil for another 2-3 mins, then switch off the flame. Keep it aside and serve it.

Milk Daliya In Indian Style Pressure Cooker

  • Add dailya to a pressure cooker, and roast it on medium heat, till it gives a nice nutty aroma and starts turning light brown in color. .
  • Add milk now and let it boil for a minute. Keep the heat to medium/ low.
  • Add nuts and raisins, now cover and seal the lid. Cook on low flame till 2 whistles. It will take another 5 mins.
  • Switch off the flame and release the pressure from the cooker and check the consistency of porridge, add sugar and mix well.
  • Add more milk, if it is thick or boil for 1-2 mins. if porridge is thin in consistency.

Milk Daliya In Instant Pot(Ultra)

  • Switch on the Instant Pot at SAUTE MODE for 10 mins.
  • Once the Display shows HOT, add Daliya/Broken Wheat and saute it till it gives a nutty aroma and starts turning light brown in color.
  • Cancel the SAUTE MODE .
  • Add about 1/4 Cup water and mix, so that daliya doesn't stick to the base of inner pot and gets burnt.
  • Add milk, finely chopped nuts and raisins. Close and seal the lid and set the PORRIDGE MODE on. At this Mode Daliya takes about 10-15 mins to cook.
  • You can also Set the PRESSURE COOK MODE on at HIGH for 10 mins.
  • Once the Timer goes off, wait for 1-2 mins. and do the QUICK PRESSURE RELEASE(QPR).
  • Add sweetener now, mix well and can again boil the porridge for another 5 mins .on SAUTE MODE.
  • Switch off the Instant Pot and transfer Daliya to serve bowls.

Serving Suggestions

  • You can serve it warm or cool completely then chill in refrigerator and serve it topped it with chopped fruits like apples, banana or sweet mango. You can also add chocolate shavings or choco-chips for some fun for kids.

In winters you can add finely chopped Dates and Figs also when adding milk, as a substitute for sugar.
