Cracked Wheat Porridge/Sweet Milk Dalia recipe in Instant Pot/Indian Pressure Cooker or Open Pan

Sweet Dalia or Daliya Porridge is a protein rich wholesome breakfast recipe that can be made in jiffy especially for busy mornings. A simple and easy to make dish that fulfills the basic nutritional requirements in morning of your toddlers to ever busy teenagers and the seniors in family.
What is Dalia/Daliya
Daliya/Dalia is Cracked Wheat or Broken Wheat and is a popular cereal in Indian Subcontinent especially in Northern and Western States. Dalia dishes are very popular for breakfast or light meal options. Daliya is also known as Fada or Kansar. It is used in many sweet and savoury preparations.
Daliya Khichdi or Fada nu Khichdi is a one pot meal which is very popular in state of Gujarat. Lapsi/Daliya Sheera is made on auspicious occasions with nuts, raisins and sweetened with jaggery.
Benefits of Dalia/Daliya
It is rich in proteins, iron, calcium and other minerals. Loaded with fibres and Vit. B, it is among one of the ingredient recommended by nutritionists. Broken Wheat is also good for Toddlers(1 yrs above). I started giving Daliya to both of my kids from the age of 1 yr onwards and till now serve them for breakfast.
Daliya dishes are regular at my parents place. Most of the days they have sweet dalia for breakfast and Namkeen Daliya or Daliya Khichdi with Moong Dal and veggies is a staple whenever they want to have light dinner. At my place also I make daliya 2-3 times a week for breakfast. A bowl full of Daliya porridge with nuts and raisins is a perfect breakfast for my school going kids.
I seriously do not believe in sending kids with only a glass of milk and do not rely on store bought cereals. Also, I do not let my kids bored with the same breakfast everyday. Some days it is Daliya, other days it is Egg Omelette, Paratha, Besan Chilla, Ragi Dosa, Dosa with Daliya and Moong Dal or these Double berry breakfast muffins. This keeps them full and active without any hunger pangs till their lunch time. Mornings are busy for all of us, so try to make something that can be easily prepared and served to everyone in family.

How to make Milk Dalia(Porridge)
Cracked Wheat or Daliya -- It is a very common ingredient that is available in all local grocery stores in India. I like to use medium thin daliya as my kids and even me don't like the texture in milk porridge. The thick one is perfectly fine for Khichdi or pulao kind of dishes. In USA you can get Daliya at the local Indian grocery stores, prefer Medium Thin Daliya variety. The brands in USA I prefer are Deep and 24 Mantra Organic(not a promotion my opinion).
Sugar- I add jaggery powder to Daliya. Avoid adding castor sugar or any kind of synthetic sugar to it. Jaggery powder adds a kind of caramelized flavour to it.You can add Coconut Palm sugar or Stevia also if you are okay with it's after taste..
Milk- I use dairy milk, but it can always be made Vegan, by choosing plant based milk. I have tried it with almond milk and it tastes so good with it. The consistency and taste will differ when we make with plant based milk Coconut Milk or Soy Milk.
Nuts and dried Fruits- Add nuts of your choice like Almonds, Cashews . Dried fruits like raisins and cranberries can be added.Also you can add Chironji and Coconut flakes to add on the nutty flavour.
You can also add finely chopped dates and figs while adding milk. Skip sugar than or adjust as requiured.
Spices and Flavors-- You can add green cardamom, cinnamon or nutmeg powder as per your choice. I usually do not add any of the above and keep it simple. The key to flavour daliya is to roast it before adding it to milk.
Ghee/Oil--Many people like to roast it in a bit of ghee, but I like the flavour of dry roasted Daliya without any ghee. Vegans can use a bit of olive oil for roasting.
How to Cook Milk Dalia
You can cook Daliya in open thick bottomed pan or to speed up and shorten the cooking time in Pressure Cooker or Instant Pot.
Before adding Dalia to milk, do not forget to roast it. In a pan dry roast daliya on low flame, till it gives a nutty roasted smell.
In a pan or pressure cooker, keep milk to boil on medium heat.Add cardamom or nutmeg(optional).
When the milk starts to boil add, daliya and cook till the consistency starts getting thick. Along with daliya add finely chopped almonds and raisins. Once it is cooked till desired consistency, add sweetener. Mix well and then switch off the gas.

Cracked Wheat Porridge (Sweet Milk Dalia)
- 1/2 Cup Wheat Daliya/Broken Wheat
- ¼ Cup Jaggery Powder or any sweetener as per taste
- 2 Cups Milk
- 1/4 Cup Finely Chopped Nuts and Raisins
- a pinch Cardamom Powder/Nutmeg Powder optional
Daliya in Open Pan
- In a pan add daliya, roast it on medium heat, till it gives a nice nutty aroma and starts turning light brown in color.
- In another thick bottomed pan, boil milk on low flame.
- Once it starts to boil, add daliya and finely chopped nuts and raisins. Mix well.
- Cook on low flame till the porridge starts getting thick in consistency. Daliya grains will also become soft and cooked with boiling milk.
- Once you get the desired consistency, add sweetener and mix well. Boil for another 2-3 mins, then switch off the flame. Keep it aside and serve it.
Milk Daliya In Indian Style Pressure Cooker
- Add dailya to a pressure cooker, and roast it on medium heat, till it gives a nice nutty aroma and starts turning light brown in color. .
- Add milk now and let it boil for a minute. Keep the heat to medium/ low.
- Add nuts and raisins, now cover and seal the lid. Cook on low flame till 2 whistles. It will take another 5 mins.
- Switch off the flame and release the pressure from the cooker and check the consistency of porridge, add sugar and mix well.
- Add more milk, if it is thick or boil for 1-2 mins. if porridge is thin in consistency.
Milk Daliya In Instant Pot(Ultra)
- Switch on the Instant Pot at SAUTE MODE for 10 mins.
- Once the Display shows HOT, add Daliya/Broken Wheat and saute it till it gives a nutty aroma and starts turning light brown in color.
- Cancel the SAUTE MODE .
- Add about 1/4 Cup water and mix, so that daliya doesn't stick to the base of inner pot and gets burnt.
- Add milk, finely chopped nuts and raisins. Close and seal the lid and set the PORRIDGE MODE on. At this Mode Daliya takes about 10-15 mins to cook.
- You can also Set the PRESSURE COOK MODE on at HIGH for 10 mins.
- Once the Timer goes off, wait for 1-2 mins. and do the QUICK PRESSURE RELEASE(QPR).
- Add sweetener now, mix well and can again boil the porridge for another 5 mins .on SAUTE MODE.
- Switch off the Instant Pot and transfer Daliya to serve bowls.
- You can serve it warm or cool completely then chill in refrigerator and serve it topped it with chopped fruits like apples, banana or sweet mango. You can also add chocolate shavings or choco-chips for some fun for kids.

Sweet dalia looks like a delicious kheer. I don't like dalia. But your post tempting me to make this dalia pudding with lots of nuts. No doubt its a super healthy dish for kids.
Daliya sweet porridge looks delightful, healthy treat for kids with lot of nuts. I make Daliya porridge with coconut milk and next time will try the sweet version.

this sweet daliya is so sought after at home, but I make it rarely. Daliya for me is usually in a savoury avatar. For the sweet-toothed munchkin at home, I think I will make it as soon as possible.
