About the Recipe
Khoya Paneer as it is known as is a royal dish from the state of Uttar Pradesh in India. The curry made rich with khoya, cashew nuts is enjoyed best with naans, pooris or jeera rice. It is served in roadside Dhabas, fine dine restaurants and also served in many marriage functions and parties made by the local Halwai.
It is on the spicier side with hint of sweetness from Khoya/Mawa.
Khoya is evaporated milk solids and is used in making Indian desserts and sweets like Gujjiya, Mawa Kachori, Mathura ke Pede, Gajar ka Halwa and many more.

The Secret Ingredient for Khoya Paneer
Khoya in the recipe gives a more rich and creamy gravy. There is one more ingredient that sets the taste of this apart.
And, that one ingredient makes the taste of this apart from other paneer dishes is the KITCHEN KING SPICE MIX. I use the MDH brand you can use this spice mix from any brand. This is available at all the Indian grocery shops and is also online available.
Ingredients to make Khoya Paneer
Paneer- Use Homemade Paneer or store bought. Paneer pieces should be firm and not crumbly. When using frozen paneer keep the cubes in slight lukewarm water (just warm enough to touch).

Mawa/Khoya- In India it is available at all the local diary and sweets/halwai shops. In US and other countries you can get this from Indian stores. For this post I have used Milk Mawa which is available in US at Indian grocery stores. Khoya or milk powder or make Instant Khoya and add to the recipe.
For Gravy- Onion, Tomatoes, Ginger, Garlic, Green Chillies.
Powdered Spices- Cumin Seeds, Coriander Powder, Red Chilli Powder (prefer Kashmiri Lal mirch), Kitchen King Masala.
Whole spices- Black pepper, Cloves, Bay Leaf, Cinnamon stick, small cardamom and black cardamom.
How to make Khoya Paneer
To make Khoya Paneer we need Khoya. You can get store bought or make it home. If you want to make instant khoya at home, check the recipe card for details.
Prepare your ingredients for curry. Roughly chop onion and tomatoes. Crush ginger garlic and green chilli in mortar pestle. You can also use store bought ginger garlic paste and add chillies with tomatoes. Add chillies as per your heat tolerance.
Heat oil in a pan/kadhai, then add whole spices and cumin seeds. When seeds crackle add chopped onion and ginger garlic paste with green chillies.
Saute till onion starts turning light pink. Then add chopped tomatoes and cashew nuts. Cook till tomatoes are soft. Switch off the flame and let the masala cool a bit. Then grind masala to fine paste. Take out bay leaf and black cardamom before grinding.
Put masala back in pan and cook for a minute. Then add powdered spices and sugar mix well.
Now, Add roasted khoya/milk powder and mix it well. Add water to adjust the consistency. Do not add lot of water, 1/2 cup at a time. We don't want thin curry like gravy.
Finally add paneer pieces and salt. Mix well cook for a minute.

Serving Suggestion
Pair Khoya Paneer with your favourite bread like Naan, Kulcha or Poori. You can even have it with chapati or ajwain paratha. Another flatbread that is prefect with it is Lachha Paratha or Tandoori Roti.
For a festive treat you can also serve it with Jeera rice, Zafrani Pulao or Fresh Mint and Peas Pulao.
Storing the leftover and Shelf Life
Refrigerate Khoya Paneer in air tight container and finish within 1-2 days. Reheat in microwave or on pan. Add little water to adjust the consistency of gravy as it will get thick.
You can also freeze khoya paneer for about 15-20 days. To reheat thaw and reheat. Do not freeze again the reheat curry.

Ingredients
- 200 g Paneer
- 1 cup Grated Khoya/Milk Powder/Milk Mawa
- 1 mediun Onion
- 3 Tomatoes
- 1-2 Green Chilli
- ½" Fresh Ginger
- 5-6 Cashew Nuts
- 1 tsp Cumin Seeds
- 1 Bay leaf
- 1 Black Cardamom
- 1-2 Green Cardamom
- 4-5 Cloves
- 4-5 Black Peppercorns
- 1 tsp Coriander Powder
- 1 tsp Garam Masala Powder
- 1 tsp Kitchen King Masala
- ½ tsp Red Chili Powder
- 1 tsp Kasuri Methi
- ½ tsp Sugar
- Salt to taste
- 2 tbsp Oil
Ingredients for Instant Homemade Khoya
- 1 cup Milk Powder
- 1 tbsp Ghee
- ½ cup Milk
Instructions
Prepare the Ingredients
- In a heavy bottomed pan, dry roast milk powder/mawa milk powder or grated khoya till light brown.1 cup Grated Khoya/Milk Powder/Milk Mawa
- Soak cashews in warm water for 5-10 minutes.5-6 Cashew Nuts
- Chop onion and tomato. Coarsely crush ginger, garlic and green chilli in a mortar pestle.3 Tomatoes, 1-2 Green Chilli, ½" Fresh Ginger
Prepare the gravy
- In a pan, heat oil, add cumin seeds, when the seeds crackle, add all the whole spices.1 tsp Cumin Seeds, 1 Bay leaf, 1 Black Cardamom, 4-5 Cloves, 4-5 Black Peppercorns, 2 tbsp Oil, 1-2 Green Cardamom
- Next add green chili-ginger paste, saute for a minute.
- Then add chopped onion and saute till light pink.1 mediun Onion
- Add chopped tomatoes and cashew nuts. Cook till tomatoes are soft.5-6 Cashew Nuts, 3 Tomatoes
- Then, add sugar and powdered spices and cook till oil starts to seperate.1 tsp Coriander Powder, 1 tsp Garam Masala Powder, 1 tsp Kitchen King Masala, ½ tsp Sugar, ½ tsp Red Chili Powder
- Now add dry roasted khoya or milk powder. Mix well.1 cup Grated Khoya/Milk Powder/Milk Mawa
- Add 1/2 cup water to adjust the consistency of the masala. Cook masala for 1-2 mins. on low flame.
- Add paneer cubes and salt mix well and some more water(if required) to get the desired consistency of the gravy.200 g Paneer, Salt to taste
- Rub fenugreek leaves in hands and add to gravy.1 tsp Kasuri Methi
- Mix well and take off the pan from the flame. Keep the pan covered for a few minutes.
- Serve hot with Naans or any flat-bread of your choice.
- It also goes well with steamed rice, any kind of pulao or even simple dinner rolls.
Make Khoya
- When using milk powder make instant khoya at home.
- In a pan take ½ cup milk, 1 tbsp ghee and 1 cup milk powder.1 cup Milk Powder, 1 tbsp Ghee, ½ cup Milk
- Mix nicely and stir for about 2-3 minutes.
- Homemade Instant Khoya is ready
