Spinach Tortilla

Homemade Vegan Spinach Tortillas are so easy to make and perfect for wholesome wraps, enchiladas or having it with any Indian curry or dal.

These Homemade Spinach Tortillas come so handy for packing something quick for lunch boxes or anytime hunger pangs of all the time active and hungry kids.

Soft Spinach Tortilla can be stored in refrigerator for a week and are freezer friendly too!! Yes you can store these for about a month, just thaw before using, reheat on griddle and use as required.

Benefits of Spinach

The nutritious leafy green Spinach is rich source of Vit.A, C, and K, minerals like Iron, Calcium, Managense. Benefits eyes, strengthens bones, adds shine to hair and skin and lowers blood pressure levels.

You like Spinach or not, one should add it in diet in one of the other way.It has a very neutral and can be used in a very versatile way.

Using Spinach in Cooking

I use Spinach a lot in my cooking. Our favourite is Palak Paneer(Indian Cottage Cheese in Spinach based gravy) and Kale Spinach Saag with Paneer koftas, that we relish with chapatis or homemade Naan. Another favourite is Lehsuni Dal Palak where I cook Spinach with Moong Lentils that my kids like to have with steamed rice or jeera rice.

Few other favourites are Palak aur Kabuli Chane ka Pulao(Spinach and Chickpeas Rice Pulao),

Rajma Palak Tikki(Cutlets) that you can also use like patty for burgers and sandwiches.

Make delicious chilled Raita- Spinach and Pomegranate Raita or this Cheesy Dip to serve with your favourite Chips and nachos- Spinach and Mint Dip.

You can also use in making pestos, creamy pasta sauce and many other ways. Chole Palak or Rajma Palak, adding it in smoothies are another delicious way to add Spinach in our daily diets.

Did you know you can sneak in Spinach in your kids' favorite brownies . Check out my Kale Brownies. The recipe has Kale sneaked in but you can always substitute Spinach if Kale is not available at your place (that I do many times 🙂 )!

I choose to cook with Spinach these handy Tortilla that can be used in so many different ways.

Let's see how to make Spinach Tortillas

I have used store bought Multigrain Flour. You can use only whole wheat flour or even a mix of different flours like various Millets flour(Jowar/Ragi), Soybean Flour and Chickpea Flour. Avoid using All purpose Flour. Though it adds softness to breads and other baking goodies, but it has no nutritional value.

Add pureed Spinach while kneading the dough. You can blanch Spinach that I do or add pureed raw Spinach.

With salt and oil and another ingredient that I add is Ajwain Seeds or Caraway Seeds which is optional.

You can use any good plant based oil like Olive Oil/ Canola Oil or Rice Bran Oil.

Method for Spinach Tortilla

First knead Dough..

Simply add and mix all the ingredients and knead a soft pliable dough with lukewarm water.

You can use your Food Processor with dough attachment or stand mixer to knead dough.

Roll dough in tortilla shape, using a rolling pin.

Cook on griddle from both sides and serve hot to cool and store as required.

Equipment

  • Blender/Food Processor
  • Stand Mixer for Dough(optional)
  • Mixing Bowl
  • Griddle/Tawa

Ingredients
  

  • 2 Cups Multigrain Flour/Atta
  • 1 Cup Pureed Spinach
  • 1 tsp Ajwain/Caraway Seeds
  • 2 tbsp Oil(Olive/Canola/Rice Bran)
  • 1 tsp Salt

Instructions
 

  • Nicely wash fresh spinach leaves.
  • Puree to a smooth paste. Optional --Blanch leaves before pureeing
  • In a mixing bowl add flour, salt, oil, caraway seeds(optional) and pureed Spinach.
  • Using lukewarm water knead to soft pliable dough.
  • Keep dough covered for at least 10 minutes.
  • When ready to make, divide dough into equal sized portions.
  • Roll each portion into circular discs/tortilla shapes, with rolling pin or use your tortilla press.
  • Heat a griddle, cook tortilla from both sides lightly.
  • Serve hot as required.

To store Tortilla

  • Cool completely.
  • Line each tortilla with a parchment or butter paper. Wrap in aluminum foil and store in freezer friendly ziplock bag or air tight container. Freeze for about a month. Thaw before using.

Serving Suggestions..

Guacamole wrap-Mash an avocado mix with salt pepper , onions/tomato.

Hummus Wraps-- with lettuce, radish or any salad veggies.

Kids Favourite--Serve with Nutella /Jam for a chocolaty or sweet treat .

Cream Cheese Rolls--Grate carrots/beetroot and mix with cream cheese, salt and pepper, spread on tortilla and make a roll for a healthy lunchbox option.

Everyone's favourite Burritos/Enchiladas or Quesadilla with your favourite filling like beans, scrambled tofu/paneer(paneer bhurji) or mixed veggies. .

Do try make these nutritious Spinach Tortillas with Multigrain flour or the flour of your choice. These are soft and come very handy for quick breakfast/lunchbox or dinner option.

One of the best ways to use finish up a box of Spinach if it is lying in refrigerator for long..

    these are so delicious and nutritous , swaty ! i remember growin up, the girls used to like differnet coloured chapatis - palak one day, beetroot the next, carrot the third.. addition of ajwain is a great idea here..
