Apple Kheer Recipe. How to make Apple Kheer, creamy apple pudding/kheer recipe.

Sweet Apples in thickened milk pudding with nuts. A creamy fruity kheer for get-togethers, fasting days and festivals like Navaratri and Diwali.

Festivals are the time to relish sweets and desserts . Desserts also form an important part of meals. My family has sweet tooth, kids and hubby love desserts in any form.

Milk based desserts or kheer are loved by everyone. Since milk is a rich source of calcium, I prefer to make different kheer like Meethe Jave , Paneer Kheer  for them. Kids love to have these as after school snack or even for breakfast while rushing off to school. You can also serve Kheer for dinner with some light dinner options like sandwich(Paneer Bhurji Sandwich, Aloo Sandwich) or parantha like aloo parantha, Meethi Parantha or even Besan Chilla.

Apple Kheer, a different kheer recipe from traditional Kheer recipes

Apple Kheer with sweet apples is a nice change from traditional kheer recipes like Chawal Ki Kheer , where cooked apples are added to thickened milk with raisins and nuts like almonds and cashew nuts. It is a delicious creamy dessert  that one can relish during festivals or any day. Since it is grain free you can have it when fasting on festivals like Navaratri. A good option for those who do not like to have grain based kheer. It is has a  light and different welcoing taste. You can flavour it with cardamom or cinnamon.

You might wonder apple kheer??  How can one cook creamy and rich pudding/kheer with apples?? Doesn't milk curdles when apples are added to boiling milk.

Why my Apple Kheer Curdles

To avoid curdling of milk, grated apples are cooked and then added at the end. To balance the acidic nature of apples and to thicken milk quickly I have also added almond meal to it. Adding Almond meal is optional. Since thickening of milk takes long time, to shorten the process I add almond meal or blanched almond paste to milk. It also gives a slight nutty taste to kheer.

Sweet Apples are in season and it is festival time starting with auspicious Navaratri festival, why not make this Apple Kheer for fasting days or for your parties.

Ingredients for Apple Kheer

Choose sweet apples for making kheer. Tart apples may give a sour taste to kheer and you may have to add more sugar.

Full fat milk, is good to make kheer but you can take reduced low fat milk also. It will take more time to thicken or will not give rich creamy texture.

I added Almond Flour to thicken milk quickly and also to balance the acidic nature of apples. You can skip it or in case you do not have almond flour, make almond paste.

To make almond paste, soak 10-12 almonds in hot water before making kheer, blanch almonds and make paste and add to milk.

*Or you can, microwave soaked almonds in war water,so that the skin becomes soft and peels off easily, grind into a paste and add to the boiling milk.

How to make Apple Kheer

Take a heavy bottomed pan, add milk to it and boil milk on medium flame. Once first boil comes, simmer flame and let it cook for 10 minutes.

Add almond flour or almond paste, and mix it. Keep on stirring the bottom so that milk doesn't get burned at bottom. add raisins to it.

Meanwhile peel and grate 2 apples(medium sized), and in another non-stick or heavy bottomed pan add very few drops of desi ghee, and saute grated apple to it. Cook doe 2-3 minutes.You can skip ghee and cook apples without it too.

Once milk starts to thicken , add cooked apples and sugar to it. Mix well and let it cook for another 5 mins.

Garnish with more chopped nuts like almonds and cashew nuts.

Transfer to a serving bowl and refrigerate once it cools completely.Serve it chilled.

Ingredients
  

  • 500 ml Milk
  • 2 Apples(medium)

    I make apple rabdi and it tastes simply yummilicious, so I can imagine how flavorful this kheer must have tasted . Addition of almond flour to thicken the kheer sounds interesting to me.
