Nutritious Flatbread Bites for Kids

It is such a difficult task for moms to come up with ideas for everyday cooking with are healthy, nutritious and has no fuss in cooking and especially when you have toddlers in the house. Though that's a different thing that you need to be constantly creative in your cooking even with your grown-up kids and at times hubby who are constantly looking for something new to eat... ?... With a toddler in the house one has to be alert all the time taking care of their movements, how to keep them busy and of course how and what to feed them. Even they want something new and interesting every day and something that keeps them engaged at least for a little while and should be nutritious too!! You must be wondering why suddenly I am talking in the post about toddlers and young kids.. it's because the Foodie Monday blog group, the group that I am a part of has it's a theme as Toddler's Finger Food. Something that toddlers can have on their own without any adult feeding them and then it has to be nutritious and suitable for them.. easy to chew, digest and full of nutritious. There is another blogging group that I recently joined Blogging Marathon, my last post-Cheesy Broccoli Quesadillas was for that group, with the theme Kid's Delight Veggies sneaked in. These themes took me back to the time when my kids were babies(ohhh I miss my little babies so much.. they grew up so fast!!) and set me on remembering, what I use to give them which they conveniently had on their own and was nutritious as well. The first thing that came to my mind was the steamed colorful idllis with the puree of veggies like carrot, spinach or beet. But here it is too cold so was not sure whether my Idli batter will come out well or will ditch me. Then I remembered these super easy and nutritious flatbreads that made for them, they would happily sit in their baby chairs and be busy with nibbling the small bites themselves. My elder one nibbled these bites just like that and the younger one liked with curd/yogurt splattering the yogurt on the table?.

Let's get back to this flatbread or Roti we call these, with are made with semolina, sattu, grated carrots, spinach and fresh cilantro leaves. It also has boiled potato and fresh paneer(Indian Cottage Cheese). Kneaded with curd/yogurt and uses very little oil/ghee for cooking. It one of the softest flatbread that even a toddler can chew conveniently. For those of you who don't know about sattu.. it is one of the nutritious flours that is used in the northern States of India like Uttar Pradesh, Bihar, Haryana and West Bengal. Sattu flour is made the flour of black chickpeas or a mix of chickpeas and Bengal gram or barley. It is gluten-free and easily digestible. Click here if you want to know more about Sattu. Outside India, it is should be available in Indian Grocery Stores, will check and update. I got this pack of Sattu from one of our friend who has recently moved here from India. She has got few packs of it and shared one with me. Earlier this week I was thinking of doing colorful idlis or non-fried veggie cutlets but when I got this pack, I decide to use it in my post. and then these delicious rotis came to mind. Other toddler-friendly ingredients in this Roti are Semolina that is extremely kid-friendly easily digestible and light on the stomach, fresh Chenna, boiled potato and yogurt all are toddler-friendly ingredients that are easy to digest. I sneaked in grated carrots, finely chopped spinach and fresh cilantro for the veggie part. You can steam the carrots and then add to the dough. Carrots are the best source of carotene, good for eyes, teeth and skin. Spinach a good source of iron, calcium and antioxidants, strengthens bones and is a high source of essential minerals and vitamins that make the body strong internally by improving organ functionalities. Fresh cilantro is full of anti-oxidants and good for digestion. Paneer has its own set of benefits. For homemade Paneer recipe and its benefits, click here. Desi Ghee my preferred fat for cooking especially when it comes to kids. Toddlers should not be fed much of the sweets and fat based food as their digestive system is quite sensitive. But ghee in very little quantities is good for the over health. The diet of a toddler or kids should consist of more protein, carbohydrates, with a lot of fruits, veggies and fluids. Try to keep it free from any additives, refined sugars or oils. My mom and grandmom had told me to use semolina and sattu for kids food. Full of protein and carbohydrates rightly needed for kids. Sattu is also used as filling in paratha recipes, for laddus and as stuffing in Litti Chokha the famous dish from the state of Bihar.

With all the benefits of these Rotis, let's get on to prepare these.

Healthy Flatbreads for Kids

Healthy, nutritious, soft to chew flatbreads for toddlers and for everyone. Made with the goodness of Semolina, Sattu(flour of Barley or Black Chickpea) , carrots, spinach and yogurt, all kid-friendly nutrients.

Ingredients
  

  • 1/2 Cup Semolina
  • 1/2 Cup Sattu any other other gluten-free or nutritious flour will be good.
  • 3/4 Cup Yogurt/Curd
  • 1/4 Cup Fresh Paneer/Indian Cottage Cheese or Ricotta Cheese
  • 2 Tbsp Chopped Spinach
  • 1 /4 Cup Grated Carrots
  • 1 Tsp Fresh Cilantro/Coriander Seeds
  • 1/4 Tsp Cumin Powder as per taste
  • Salt

Instructions
 

  • Mash the potatoes well, mix with paneer. 
  • Add all the ingredients and knead into a soft dough with yogurt.
  • Divide into equal sized portions. Roll each portion in a circular dish of required size. 
  • Heat a griddle or tawa, and cook from both sides. Apply little desi ghee while cooking.  
  • Serve to kids and even to elders with yogurt or their favourite chutney. For toddlers, you can make small bite-sized portions and serve them. 

Notes

These make a very healthy breakfast option. Add onions and green chilies when making for grown-ups.
Any other multigrain flour can be used. If you can't find Sattu add chickpea flour.
In place of spinach, finely chopped methi leaves can also be added to the dough.

So if you have a baby in the house who has been introduced to grains and veggies and has started eating small meals on its own, it one of the healthiest option for you. Cut into small bite-sized shapes using cookie cutters and make it more appealing to your toddler. As not only the nutrition but also the look and appeal of the food is important as anything non-appealing to them can be discarded by these little brats without tasting also!! ?

I have made these flatbread bites keeping in mind kids above 1.5 or kids who can chew food. You can tweak the recipe as per your requirement. Pack these flatbreads in school going kids' lunchboxes or make for weekend brunch and enjoy with some yogurt, chutney or pickle and cup of hot chai. Add some chopped onions and green chillies when making for adults. These are a good option if you are traveling with kids, easy to feed and wholesome!!

    Not sure which I love more in this recipe, Swati, the medley of flavours from the sattu, carrots, spinach, potato and paneer or the cute shapes! Reminds me of when I was young and my mom would make dosas for us in different shapes, bunny rabbits, owls etc. It was such fun to eat these tiny figures!

    Swaty, I loved the inclusion of Sattu here and the beautiful shapes in which the flatbreads are presented making it ideal for toddlers to consume without much fuss. Including healthy flours and veggies very early on in their diet goes a long way in terms of their nutrition and growth.

    What a fun way to serve healthy rotis to toddlers. Awesome idea Swaty, just right for tiny fingers. I remember serving my kids colorful rotis.. red, green, orange using natural veggie purees. What mums have to do to get kids to eat healthy food.

    I remember making dosas in various shapes for my daughter when she was little. They grow up so fast. These rotis with so much healthy ingredients are so good for kids and they will love this for those beautiful shape.
