Ingredients
In Rajma Pulao, use pre-boiled Rajma beans. You can also use canned Rajma/Red Kidney beans. Drain and rinse canned Rajma well before adding to pulao mix.
For the recipe I used Dark Red Kidney beans, you can use any variety like Jammu Rajma, Light Pink Rajma or Chitra Rajma.
I have also used Basmati Rice, you can take any other good quality rice that you use for making pulao or other rice dishes.
Also, if you avoid white rice due to any reasons then substitute it with brown rice or quinoa. Cooking time will vary.
I made it without any veggies, that the way we like to have it. You can add mixed veggies if you want.
Other Ingredients used are.. Onions, ginger Garlic, whole spices, garam masala with red chilli powder.
What to do if I do not have pre boiled Rajma
In case you don't have pre-boiled Rajma beans you can soak a cup of beans overnight. One cup dried Rajma beans gives about 2 Cups of boiled beans. Keep half to use in cutlets, salads or burritos or soups. Boiled Beans stay good for 4-5 days in refrigerator when stored in an air tight container.
You cook beans in pressure cooker(Instant Pot or Indian Pressure Cooker) and use it in pulao. In Instant Pot overnight soaked beans take about 20 mins. of cook time. In Indian Style Pressure cooker, cook beans till 3-4 whistles on low flame for about 15-10 mins.
Also, in case you forget to soak beans overnight, a quick way is to soak beans in hot water with a tsp of salt. Cover the bowl or container in which you have soaked beans. It will take about 1-2 hrs, then you can cook beans.
