Strawberry Pineapple Smoothie with Coconut Milk is a great way to enjoy a glass full of fruits blended together.

Creamy rich and so delicious, this fruit smoothie with tropical flavours, hits the right note and refreshes you to start your day or at any time of the day.

It is completely Vegan, No artificial sweeteners and so light filling and refreshing.

About the recipe

Smoothies are a great way to start your day or to have a mid morning or as post work snack. Fruit or Vegetable smoothies are loaded with antioxidants, fibers and other nutrients and great taste too. For busy morning or days when you just can't sit and have daily dosage of plate full of fruits throw in some fruits and enjoy .

Strawberry and Pineapple Smoothie combines two of my favorite fruits strawberry and pineapple blended together with coconut milk which adds a nutty flavour.

Strawberry season is the best time to enjoy this smoothie as it tastes best with seasonal produce.

Benefits of Strawberry and Pineapple

Strawberries are consumed raw and fresh and also used in making jams, jellies, in baking and dessert preparation.

These are rich in Vit. C and antioxidants along with minerals like potassium and manganese. These are a good source of vitamins and fibre without any fat, cholesterol or sodium. Strawberries are low calorie snack and heart friendly.

Pineapple is not only delicious but also loaded with health friendly and anti-inflammatory nutrients. It is rich in Vit. C, antioxidants, fibre and minerals like manganese. The enzyme present in pineapple acts as meat tenderizer and aids in digestions.

So enjoy these two super healthy, super juicy fruits and reap maximum health benefits.

Ingredients to make Strawberry and Pineapple Smoothie

Strawberries and Pineapple- I prefer using fresh fruits especially to make smoothies. I freeze pineapple for an extra creamy smoothie. You can also use use the frozen berries. I don't recommend using canned pineapple in the recipe especially which is soaked in sugar syrup.

Coconut Milk- I love adding coconut milk as it adds a nutty taste. Also, adding dairy milk with fruits may cause an acidic reaction so, it is better to use plant milk. Other choices can be almond/cashew /soy/oats milk. For a more creamy smoothie you can also add coconut cream.

Sweetener- I have added soaked dates which is my personal choice to add in smoothies and shakes. You can add honey also if there are no vegan restrictions. Add soaked dates/figs or maple or any raw sugar like coconut palm sugar or even jaggery powder.

Others- Soaked Chia seeds/basil seeds or top it with pumpkin seeds, hemp hearts.

How to make Strawberry Pineapple and Coconut Smoothie

3 easy steps and your Strawberry Smoothie with tropical flavours is ready. If you are going to use dates in the recipe just like I did, then soak dates in warm water for a couple of minutes. You can add finely chopped dates as well, a high speed blender will blend the dates nicely.

This recipe serves serves 2, you can adjust the ingredients as per the no. of servings required.

For an extra creamy and thick smoothie you can freeze strawberries and pineapple for a couple of hours.

Add the chopped strawberries, pineapple. dates and coconut milk. Blend until completely smooth.

Add soaked chia seeds and enjoy!!

You can add other berries or fruit of your choice. Add one banana which makes it thick and creamy and serve in a smoothie bowl.

Adding quick rolled oats or any protein power makes it extra filling especially for those on protein rich diets.

Substitute coconut milk with yogurt(dairy or plant based).

Storing the leftover smoothie

It tastes best when consumed fresh. You can refrigerate the leftover if any for a day or freeze for more days about a week.

Equipment

  • High Speed Blender

Ingredients
  

  • 1 Cup Frozen Strawberry
  • 1 Cup Frozen Pienapple
  • 1 Cup Coconut Milk
  • 1 tsp Soaked Chia Seeds
  • 3-4 Dates(seedless) or any sweetener

Instructions
 

  • Soak dates on warm water or soak for and hour before making smoothie.
    3-4 Dates(seedless)
  • Soak chia seeds in water.
    1 tsp Soaked Chia Seeds
  • In a blender jar, add frozen strawberries, pineapple, coconut milk
    1 Cup Frozen Strawberry, 1 Cup Frozen Pienapple, 1 tsp Soaked Chia Seeds, 1 Cup Coconut Milk
  • Blend smoothly.
  • Add soaked chia seeds and serve.

Notes

Use any sweetener of your choice if strawberries are a bit tart.
Substitute coconut milk with any plant milk or yogurt. If there are no dairy restrictions, then you can add yogurt also. 
Additional Add-ins- Blueberries or Raspberries,  Banana, Protein Powder, Apple, Hemp Seeds.
