Aamras Recipe | How to make Aamras | Indian Mango Pulp Recipe
Aamras, Indian Mano Pulp is fresh mango puree flavoured with spices like saffron and cardamom. It is served as a dessert or a sweet with meals.
It is a GLUTEN-FREE and VEGAN FRIENDLY dish where you can substitute dairy milk with any good plant based milk.
It is traditionally served with Pooris (fried puffed up Indian flatbreads). Aamras is loved throughout India, but is known to have originated in the states of Gujrat and Maharashtra.
In Gujarat people like to add snooth or dry ginger powder to it. Konkani version (Coastal areas of Goa, Maharashtra, Karnataka and some other South Indian states), black pepper is added before serving. It cuts down the heat of mangoes.
When there is mango season, I often make it, my kids love it and we have not only with pooris but also with Parantha or as a dessert after meals. It is a no fuss, NO COOK recipe that takes only a couple of seconds to make.
Whenever I get fresh Methi leaves, I make Methi Parathas and have it with Aamras when there are fresh mangoes.
How to make Aamras
One of the easiest way to make Aamras is to blend the mango pieces in blender with water. milk and spices(cardamom/saffron/dry ginger).
Many people make it the traditional way also by taking out the pulp with hands.
How to make Aamras the traditional way(without blender)
To make without blender, soak clean and washed mangoes in water for 1-2 hrs. This softens the pulp. Take out the tip of mango and then squeeze the pulp in a clean container. Peel off mangoes and squeeze out more pulp from the seeds.
Add water and milk along with sugar/jaggery as required. Mix well.
Chill it for a couple of hours before serving or if you are serving it immediately, blend with some ice cubes.
What is the best variety of Mangoes to use in Aamras
We can make Mango Pulp/Aamras with any god sweet ripe variety of locally availabe mangoes. I have tried it with the popular Alphonso, Dusheri (North Indian Variety), Safeda or Langda variety.
Do not use mango which has tangy taste.
Can I make ahead and freeze Aamras
You can make a big batch of Aamras freeze it and use as and when required. It stays good for months. Thaw it and use as required.
You can also use this pulp for making mango ice cream, mango custard, mango mousse, mango lassi or mango shake and many other mango puree based desserts or dishes!!

Aamras | Indian Mango Pulp
- 5-6 Fresh Ripe Mangoes
- Raw Cane Sugar/Jaggery as per the sweetness of mangoes and your taste
- ½ Cup Milk (Dairy/Plant based) Check notes
- 1-2 Green Cardamom (take out the seeds and discard the covering)
- 3-4 Saffron Strands
- Chop mangoes. Discard the peel.
- Put in a blender with sugar, cardamom, saffron and milk and ½ cup water.
- Consistency of Aamras can be adjusted as per your liking. We like it thick if you want it thinner add little more milk/water. Take care not to make it very thin or watery.
- Take out in a container or serving bowl, chill for a couple of hrs before serving.
- If serving immediately, add some ice cubes while blending the mango pieces.

Make ajwain pooris to go with it, even parathas(Aloo Paratha, Chana Dal Paratha) or stuffed kulchas(Aloo Kulche), all go well it.
