What is Amaranth Cereal
It is a simple and quick snack made with popped Amaranth seeds. You can pop the seeds at home or use store bought popped seeds to use in the recipe.
Amaranth Granola or Ramdana/Rajgira and nut mix is Gluten-free, Vegan Friendly and Keto friendly snack and even kids will love it.
Popped Amaranth Seeds or Rajgira Seeds are a great way to include in your diet. Gluten-free protein rich seeds can be popped just like corn kernels but are far more health friendly than popcorns.

What is Amaranth/Rajgira
Amaranth is a pseudo grain just like Quinoa. It is also considered as main grain used in many civilizations like Aztec, Maya and Inca.
In India Amaranth Seeds are also known asย Rajgira, Ramdana or Chaulai.ย Make you Navratri or other fasting delicacies using these tiny seeds/flour(Rajgira atta).

Ingredients to make Amaranth Granola/Ramdana Cereal
Popped Amaranth Seeds- You can pop Amaranth seeds at home or use store bought popped seeds, especially if you are working and need quick and easy healthy snack recipes.
Nuts and Dry Fruits- I have used mix of cashew nuts, almonds, raisins and dry coconut slices. You can use any dry fruits/nuts of your choice. Pumpkin seeds, Chia seeds Walnuts, Pecans, Dried Berries are other excellent choice to add in here.
Sweetener- Jaggery powder acts as the binder and sweetener in this protein rich granola. You can also add maple syrup/coconut sugar/raw cane sugar for the vegan options. Honey can also be used in the recipe.
Use Ghee or Coconut Oil(for vegans) to toast the nuts. You can also use unsalted butter or olive oil.
Variations
You can add some peanut butter or almond butter for added taste and nutrition.
Instead of dry coconut slices, you can add desiccated coconut.
Add some chocolate chips/chunks for a more delicious flavor especially for kids.
How to make Amaranth Granola or Ramdana/Rajgira Granola
If you have puffed amaranth seeds then it takes just a few minutes to make this granola. Puffed Amaranth seeds are now available at many local and online stores.
- Roughly chop the nuts and dry coconut.
- Roast the nuts, coconut and raisins in ghee/butter/coconut oil.
- Now add jaggery powder/your preferred sweetener. If using honey or maple syrup, warm it a bit in the pan. Then add the dry fruits and nuts.
- Add water to jaggery powder and let it come to a boil. It should be of 1 thread consistency.
- Add the roasted nuts and popped amaranth seeds and mix it lightly and nicely.
- Take out in a container and store. Use as required.
Storage and Shelf Life of Amaranth Granola
Store in an airtight container. No need to refrigerate it.
It stays good for about a week.
Serving Suggestions
Have it just like that with your tea or coffee. Add to breakfast parfaits or have it with milk.

Ingredients
- 1 cup Popped Amaranth/Ramdana Chaulai
- ยผ cup Mixed Nuts
- 10-12 Raisins
- 1-2 tbsp Dry Coconut roughly chopped
- ยผ-ยพ cup Jaggery Powder Coconut sugar/honey/maple syrup
- 1 tbsp Ghee/Coconut Oil or butter
Instructions
- Pop the amaranth seeds. Or, you can use store bought popped amaranth seeds.
