Benefits of Sweet Potatoes and Potatoes
Sweet potatoes are known to be more nutritious than potatoes. Sweet potatoes are rich in fibers, vitamins and minerals and a great source of beta-carotene. Many studies have shown that these also regulate the blood sugar levels.
Potatoes are good source of fibers, Vit. C, minerals like potassium, zinc and calcium for stronger bones.
Both sweet potato and potatoes are known to be Poor Man's food due to the easily availability cheap prices as compared to other vegetables and their nutritional value.
How to make Aloo Aur Shakarkandi Ki Chaat(Potatoes and Sweet Potatoes Chaat)
A very easy and quick recipe if you have the chutneys in hand. We need Dhaniya Chutney/Green Chutney or the Coriander and Mint Chutney and sweet and tangy Tamarind Chutney.
When making for non-fasting days one can add finely chopped onions, with sev(fried chickpea very fine noodles) on it. On fasting days one can add pomegranate seeds or cucumber or aloo laccha (fried potato noodles used for Indian namkeen/ savoury snack).
First step to make Aloo Shakarkandi ki Chaat is to boil potatoes and sweet potatoes. Many people peel and cook raw vegetables. But I find it easy to use pre-boiled vegetables especially on fasting days. You can boil it keep it and use whenever required. It takes only few minutes to make this delicious stir fry chaat.
Ingredients..
Sweet Potatoes. Potatoes, Chaat Masala(homemade or store bought) , kala namak(black salt)are the main ingredients.
Optional ingredients are pomegranate seeds, fresh cilantro leaves, finely chopped onions, plain yogurt. You can garnish chaat with any of the toppings.
Method
Boiled Potatoes and Sweet potatoes, are stir fried in little oil Cilantro and Mint Chutney and Tamarind Chutney.
First Step is boil Potatoes and Sweet potato. Use pressure cooker to boil. In open pan it can take quite sometime. I took medium sized sweet potatoes, one whistle in pressure cooker is enough .Sweet potatoes take less time to cook, one whistle is enough. More than one whistle it urns very mushy.
You can also boil sweet potatoes in Instant Pot, if making in large amount. Will update the method later.
Potatoes and sweet potatoes can also be microwaved. Wrap in a tissue paper and cook as per microwave's setting.
You can also roast sweet potatoes and potatoes in oven.
Stir fry peeled, cubed tubers in little desi ghee. Once potatoes and sweet potatoes start to get caramelize, add salt and mix well.
Take out in a serving bowl.
Divide into individual bowls, top with green chutney and tamarind chutney. add pomegranate seeds or onion (during non-fasting days).
I just tempered it in desi ghee.Stir fired with desi ghee, adds on to the flavour and I like to have it this way.
For Vegan or No-Oil version or , you can skip frying it in ghee and directly add chaat masala and chutneys.
Few tips to note while making it for fasting days..
If you don't use all the ingredients for Chaat masala or avoid the ready-made one during fasting, you can use only roasted cumin powder, dry mango powder(amchur) and sendha namak(salt used for fasting) for taste.
All the above spices are available at Indian grocery stores.
Substitute for Sendha Namak is Pink Himalayan Salt.

Fire roasted Shakarkandi ki chaat is a popular Street food in North India. At home boiling is the easiest way. I like that you have mixed both the varieties of potatoes in this chaat. Looks lip smacking !
