Mango Chia Pudding, Chocolate Chia Pudding, Rose Flavored Chia Pudding with Nuts

Here I bring you healthy Chia Seeds Pudding Recipe in 3 different flavors. A no cook pudding recipe that is not only delicious but also very filling and nutritious.

Loaded with antioxidants and fruits and nuts, these creamy and rich pudding cups are a delicious treat for hot summer days.

This is one of the easiest nutritious breakfast option that you can make ahead and grab while on your way to office.

Ideal not only for breakfast but you can enjoy it as dessert after meals or evening snack, a perfect sweet light treat for you and your family.

Chia Seeds and it's benefits

Chia Seeds are small very tiny seeds loaded with nutrients like antioxidants, fiber, proteins, omega-3 fatty acids and minerals like calcium and various vitamins. Don't be get fooled by it's size.. these pack a power punch. These seeds when soaked in liquid (milk/water/juice) swell up and form like gel.

Chia seeds have been an important ingredient in the food of Mayans and Aztecs which was forgotten for centuries. Now recently in the modern world these are recognized as the SUPER FOOD.

Chia seeds are consumed as popular health food of health conscious people. Due to it's property of absorbing liquid these are also used as thickening agent in sauces, jams, fruit preserves and also used as an egg replacer in baked goods.

Checkout this soft and moist Chai Spiced Whole Wheat Apple Cake, Eggless Light Fruit Cake where I have used Chia gel as an egg replacer.

Basic Ingredients to make Chia Seeds Pudding

To make basic Chia seed pudding we need of course Chia Seeds. Along with it other basic ingredients are-- Milk, Sweetener, Fruits and Nuts

Milk- Any good dairy/plant based milk. Almond Milk, Cashew Milk or Soy Milk any light milk is good to use. Do not use creamy coconut milk. Add some water to it before making pudding.

Sweetener- Use any good raw sugars like jaggery powder, coconut palm sugar. Maple syrup or honey are also used to sweeten the pudding.

You can also use dates syrup, jam/marmalade, fruit purees.

Fresh Fruits- Use any fresh seasonal fruits of your choice. Strawberries, Raspberries, Apple, Mango, Blueberries, Banana. You can add fruits as per the flavoring used in pudding.

Nuts and Dried Frits/Berries- Cashew nuts, Walnuts, Almonds, dried berries like raspberries, strawberries, apricots, dates, figs and apricots etc.

Chop the nuts and berries and dried fruits in fine/small pieces before adding to make it more palatable.

Flavoring agents-Vanilla extract/essence, rose essence, cinnamon powder, cardamom, orange and lemon zest.

You can make different combinations with the above mentioned ingredients.

How to make Basic Chia Seeds Pudding

To make Chia pudding base, add chia seeds in milk, mix well and let it stand for a few minutes. It may form lumps, for that mix again. Add sweetener, flavoring or other add-ins (dried fruits, nuts, purees) and mix well.

Refrigerate the pudding for atleast 4-5 hrs or overnight, the more the better.

Before serving add fresh fruits, more nuts, granola etc.

Variations of Chia Pudding

As mentioned above, here in the post I have covered the Mango, Chocolate and Rose flavoured Chia Pudding.

Detailed recipe instructions for all 3 are in the recipe card.

Chocolate Chia Pudding- Mix cocoa powder in milk along with chia seeds and sweetener till no lumps remain. Add vanilla extract for flavoring. I have also added chopped walnuts, dried cranberries here.

You can also add chocolate sauce in place of cocoa powder and sweetener. But may not be a very healthy choice as store bought syrups are loaded with synthetic sugar and corn syrups.

Before serving you can ad freshly cut banana pieces and add more chopped walnuts and dried berries. For kids you can also add finely chopped chocolate or choco chips.

Choco Banana Chia Pudding

Rose Flavored Chia Pudding with Nuts- Add rose syrup along with chopped cashew nuts and raisins to chia base. Rose syrup already has sugar, so there is no need to add any sweetener separately.

Rose Flavored Chia Pudding

Mango Chia Pudding- To make this flavour, use fresh Mango pieces and pulp along with cardamom powder. Add sweetener if required.

For this make chia base pudding add cardamom powder . Then refrigerate the pudding. You can make alternate layers with mango puree and chia base. Add fresh mango pieces before serving.

How long can we store Chia Seeds Pudding

It can be stored for 2-3 days. Keep it refrigerated, in a closed container or covered with cling wrap.

No cook pudding made with Coconut when kept for long gives an after taste, so avoid keeping it for long.

  • Mixing Bowls/Mason Jars
  • Mixing Spoon/Fork/Mini Whisk

Ingredients
  

Chocolate Chia Pudding

  • 3-4 tsp Chai Seeds
  • ¾ Cup Milk(any plant based) or dairy
  • 1 tbsp Cocoa Powder
  • ½ tsp Vanilla Essence
  • 1-2 tbsp Chopped Walnuts and Dried berries
  • Banana pieces as required before serving

Rose Chia Pudding

  • 3-4 tsp Chia Seeds
  • ¾ Cup Milk(any plant based)
  • 2 tbsp Rose Syrup or Roohafza or as required
  • 2-3 tbsp Raisins and Chopped Cashew Nuts

Mango Chia Pudding

  • 3-4 tsp Chia Seeds
  • ¾ Cup Milk(any plant based) or dairy
  • ¼ Cup Mango Puree
  • 1-2 tsp Sweetener as required

Instructions
 

Chocolate Walnut Chia Pudding

  • In a bowl or jar, add milk, cocoa powder¼ tsp of vanilla essence and sweetener as required.
  • Mix well till the cocoa powder if mixed thoroughly without any lumps.
  • Add chia seeds, chopped walnuts and dried berries. Mix nicely. Keep for a minute and then again mix well.
  • Cover the bowl with cling film or jar with lid and refrigerate for 6-7 hrs.
  • When ready to serve add banana slices more of chopped walnuts and dried berries.
  • For kids you can also add chopped chocolate or cocoa powder.

Rose Chia Pudding with Nuts and Raisins

  • In a bowl or jar, add milk, rose syrup/roohafza, chia seeds as required. No need to add sweetener as the syrup is already sweet.
  • Add chopped cashew nuts and raisins.
  • Mix well. Keep for a minute and then again mix well.
  • When ready to serve, add more of chopped nuts and and raisins.

Mango Chia Pudding

  • In a bowl or jar, add milk, chia seeds, pinch of cardamom powder and sweetener if mangoes are not very sweet. This is the base pudding.
  • Keep for a minute and then again mix well.
  • Cover the bowl with cling film or jar with lid and refrigerate for 6-7 hrs.
  • When ready to serve, in a bowl or small glass, make layers of mango puree and chia base pudding. Top with mango pieces and enjoy.

Notes

The ingredient list is for the individual portions, increase the amount as per the portions required.
When mangoes are not in season, then add any other seasonal fruit like fresh berries and puree(optional).
Avoid nuts if you have nut allergies.
