Virgin Litchi Mojito or Lychee Mint Cooler is a refreshing drink or juice made with fresh lychees/litchi with added goodness of mint and kiwi.

This Litchi Mojito or call it Litchi Lemonade, is a twist on the popular mocktail made with fresh lychees or litchi juice. Make it and enjoy it on hot summer afternoons when you litchis are abundantly available in markets.

It is non-alcoholic and kids friendly and one of the best way to enjoy fresh seasonal lychees other than eating.

About Litchi/Lychee

Litchi or Lychee is a summer fruit native to Southeast Asia especially some provinces of China. It is also abundantly found in the some North India states (foothills of Himalayas), Bihar, West Bengal and some North Eastern states.

It is a small one seeded fruit with rough scaly covering that can be easily peeled off. Inside is the white pulpy flesh which is very juicy and sweet.

Now canned and frozen litchis are available, which can be used in the recipe if fresh litchis are not available.

Benefits of Litchi/Lychee

Lychees are rich in Vit. C, antioxidants and have liver cleansing properties.

Lychees are also known to be rich source of Vit. E, which helps in keeping the skin healthy and shiny.

Litchis also have anti inflammatory properties which helps in preventing and fighting flu and related infections during summer months.

Storing Litchis/Lychees

Wash litchi nicely keep it soaked in water for 1-2 hrs and then refrigerate for a couple of hrs before making the juice. Do not soak for long as the litchis will rot.

If you get a big batch of litchis then refrigerate it. The color of the peel turns pale brown with time, but if you keep spritz lychees with water, the color of the peel stays pink/red.

About the recipe

Though best way to enjoy litchis is simply eating it but is also used in various dessert and mocktails preparations. Litchi juice is very popular.

To reap the benefits of fruits it is advisable to eat them. But fresh fruit juices are also equally good. These instantly add a punch and energise the body and mind.

Instead of buying the canned juices which are loaded with sugar and preservatives, make fresh litchi juice at home. Try your own variations in flavours with different fruits.

Peeling and deseeding litchis may take some time but do try and make for your summer lunches and parties.

Please Note--seeds of litchi are poisonous, so be careful not to swallow.

Always Peel Lychee/Litchi, take out the pulp and discard the seeds.

Ingredients to make Litchi Juice/Lychee Mint Cooler

All the ingredients to make this quick and easy Lychee Juice with Mint and Kiwi we need

Litchi/Lychee- Choose fresh pink litchis or use canned litchis (drain and rinse in water before using).

Mint- Fresh Mint leaves not only add a refreshing taste to the juice but also adds a nice green hue to the white litchi juice. Do not add the stems of mint. Use only 4-5 mint leaves not more than that, as mint will over power the flavour of lychee.

Kiwi and Lemon Juice- It not only adds to nutritional content but also a citrusy taste to the cooler. Adding Kiwi is optional and can be skipped in the recipe. But I suggest add and you will the love the little tangy flavour.

Sweetener- I prefer adding a tsp of raw cane sugar to balance the taste. You can also add Maple syrup, honey, simple syrup or simple castor sugar. Or, simply keep it sugarfree.

Other- Ice cubes and Chilled water.

Other optional ingredients for variations in the Litchi Juice/Lychee Lemonade

  • Make simple Litchi juice with only litchis and lemon juice and skip mint and kiwi.
  • Instead of Mint leaves, you can use 4-5 Basil leaves and make Basil Lychee Mojito/Lemonade. It tastes equally good!!
  • Add a small piece of fresh ginger to enhance the taste.
  • Add some rose syrup for Rose Flavoured Lychee Lemonade.
  • Add sparkling water/soda or sprite.
  • Trying adding Chaat Masala or Jaljeera spice mix of Masala Litchi Lemonade.

How to make Litchi Mint Cooler with Kiwi

Keep the ingredients ready.

Peel litchis, deseed it and then keep the pulp in a separate bowl.

Use 1/2 kiwi in the recipe. Cut it roughly and add to litchi.

Throw in some mint leaves and add 1 tsp sugar or any sweetener. Squeeze 1/2 lemon.

Add 2 ice cubes and about 1/2 cup water. You can adjust the consistency of juice as per your preference.

Serving Suggestion

In serving glass, add 2-3 mint leaves and a tbsp of kiwi pieces. Add 2-3 ice cubes, and add litchi juice.

Serve immediately or chill for a couple of hrs. Do not add ice cubes if not serving immediately.

Equipment

Ingredients
  

  • 8-10 Lychees/Litchis
  • 1 Kiwi (cut into halves)
  • ½ Lemon
  • 5-6 Mint Leaves
  • 1-2 tsp Sugar

Instructions
 

  • Nicely wash fresh litchis before using.
  • Peel the outer covering, then make a cut on the flesh and then separate the flesh and the seed. Discard the seeds.
    8-10 Lychees/Litchis
  • Take half kiwi, peel it and roughly chop it. Keep the other half will use it while serving.
    1 Kiwi
  • Take 2-3 mint leaves , take out the thick stems.
    5-6 Mint Leaves
  • In a blender add all the ingredients along with sugar and squeeze the lemon juice.
    ½ Lemon, 1-2 tsp Sugar
  • Add 2 ice cubes and 1/2 cup water and blend to smooth mix. Add more water if required.
  • Pour in serving glass and enjoy.

Serving suggestion

  • Take small portion of the other half of kiwi and chop it into small pieces. Add 1 tbsp of kiwi pieces along with 2-3 mint leaves and muddle with wooden spoon or muddler.
    5-6 Mint Leaves, 1 Kiwi
  • Add 2-3 ice cubes and add the juice.
  • Enjoy chilled Lychee Mint Cooler with Kiwi.

Litchi Mint Cooler with Store bought(Canned) Litchi Juice

  • Take 1 glass of chilled litchi juice.
  • Crush Kiwi and mint leaves and add to serving glass.
  • Add lemon juice, ice cubes and litchi juice. Mix and serve topped with more mint leaves and kiwi slice.
  • Store bought Litchi(Lychee) juice already is already sweetened, so add sugar/simple syrup if required.
