Gluten-free Vegan, No Cook Apricot Fig and Nuts Energy Bites Recipe
Dried Apricot Fig and Nuts Energy Bites, make a perfect snack for any time and guilt free munching.
Synthetic Sugar free, energy bites can be made with all the readily available ingredients in your pantry and can be adapted as per your preferences.
It takes only 10 mins. to make these snack bites that are loaded with your favourite nuts and dried fruits.
Both of my kids and hubby have sweet tooth. For there anytime sweet cravings or kids' lunchboxes I always keep some healthy snack ready, that takes no effort in preparing too.
Perfect festive treats for those whose want to avoid synthetic sugar as the dried fruits add natural sweetness here.
You can pack these in beautiful gift boxes and gift to your loved ones on festive and special occasions.
Few of the snacks(sweet) with nuts, seeds and dried fruits that I have shared on my blog.. Date and Fig Rice Krispies, Ragi Dried Fruit and Nuts Ladoos, Power Packed Homemade Granola, Mixed Nut Gur Chikki(Jaggery Brittle), Til Khus Khus Chikki in Coconut Sugar.
These sweet treats are loaded with all the essential nutrients and are kids friendly. I make these on rotation, as kids should not get bored with the same kind of stuff.

Ingredients for Apricot Fig and Nuts Energy Bites
Dried Apricots, Figs, Nuts(Almond, Pistachio, Cashew Nuts), Coconut Flakes, Fennel Seeds and Cardamom Powder/Seeds.
Few years back I came across few recipes of no cook, energy bites, while I was looking for recipes using dried apricots. There are many variations of the recipe with different nuts and dried fruits.
I like Apricot, both fresh and dried. Dried ones are a great option for munching or mix in with nuts for trail mix.
These are a great source of Vit. A, Vit, C and also contains Vit. E. and iron. These are rich in fiber hence help keep the body fuller. These are good for bones, digestion, stomach related problems and also improve skin health and vision.
Another dried fruit that I used here on the recipe is Fig. Health benefits of the figs are the same like that of Apricots. These also contain prebiotics are good for the digestion and promote good gut bacteria.Figs are also rich in calcium and thus help in building strong bones.
You can choose any nuts of your choice. I have used here almonds,pistachios, cashew nuts. Hint of Cardamom and a tsp of Fennel seeds to add the flavour.
Roll the bites in coconut flakes for nutty tropical flavour.
Substitutes for the ingredients-- The recipe if very adaptable and you can conveniently substitute nuts used in the recipe as per your preference.
Dates can be used in place of figs.
Add a tbsp of chia seeds for a nice crunch, if skipping figs.
If you have nut allergies, you can skip those and add seeds like pumpkin and sunflower seeds.

Apricots, Fig and Nuts Energy Bites
Equipment
- Food Processor
Ingredients
- ½ Cup Dried Apricots
- ½ Cup Dried Figs
- ¼ Cup Almonds
- ¼ Cup Cashew Nuts
- ¼ Cup Pistachios
- ¼ Cup Coconut flakes
- 1 tsp Fennel Seeds
- ¼ Tsp Cardamom Powder/Seeds
Instructions
- In a blender add figs, apricots, pulse till it breakdowns smalls bits.
- Add nuts, cardamom seeds/powder, fennel now and pulse again.
- Make a coarse paste of the whole mix.
- Take out in dish or plate.
- Add half of coconut flakes in the mixture. Mix it nicely.
- Make small lemon sized/bite sized balls.
- Take the rest of coconut flakes in a plate and roll the balls, coating nicely.
- Keep in an air tight container and enjoy as and when you want!!
