If you love spicy food with lots of garlic flavour, this Rajasthani Chutney is a must make for you. Made with whole red chilies and garlic, this famous Rajasthani Lehsun Chutney is a must have in Rajasthan for everyday meal.
If you have had Rajasthani food the chutney is paired with the traditional delicacies such as Dal Baati, Moong Dal Chilla or Gatte Ka Pulao, Pakoras The chutney can also be enjoyed on toasts, with dosa and paranthas.
Ingredients and how to prepare ..
The chutney is made with very basic ingredients Lehsun(Garlic) and Sookhi Lal Mirch (Dry Red Chillies). Traditionally the chutney is prepared in mortar and pestle. Adding salt to chillies and garlic enhances the taste of chutney and brings out the flavours. This authentic way of preparation of chutney is still followed by many in India. If you don't have the mortar pestle, you can make it in grinder or blender. Soak chillies for 10-15 minutes before making chutney. Adding lemon juice or vinegar or a combination f both, balances the sour taste of ginger and chillies. You can add 1/2 tsp of sugar/jaggery to balance out the acidic nature of chillies.
There are many variations in making this chutney. Many temper it with mustard seeds/rai or methi dana/fenugreek seeds. I follow a very simple one.. grinding garlic and chillies together with salt and ten tempering the chutney in mustard oil. and adding a tsp of vinegar/lemon juice. Another popular chutney from Rajasthan is Tomato and Garlic chutney, where roasted tomato and green chillies are used. Shall update that soon.

The ingredients of this chutney aids in digestion and helps in building the immunity of body against the cold and chilly winters and hot and dry summers.
This chutney can be stored in refrigerator for a week. Adding vinegar also increases the shelf life of this chutney.

Rajasthani Lehsun Ki Chutney
Ingredients
- 15-20 Garlic Cloves
- 10-12 Whole Red Chillies
- 1 tsp Sarson Oil/Mustard Oil or use any of your choice
- 1-2 tsp Vinegar(I used Apple Cider)/Lemon Juice
- Salt as per taste
- 1/4 tsp Suagr/Jaggery optional
Instructions
- Wash and soak whole dry red chillies in water for 15-20 minutes.
- Peel and wash garlic.
- Grind the chillies and garlic in grinder till smooth. While grinding add salt and vinegar/lemon juice. Add little water.
- In a pan heat oil and add the chutney paste. ad sugar. Cook for 2-3 minutes.
- Cool and store in an airtight container.
Notes
So do take this hot and spicy chutney and use it with your everyday meal. This chutney can also be prepared with dry red chilli powder if you do not have dry whole red chillies.

We all have our versions of this garlic and chili chutney. My mum use to make it dry. I usually add carom seeds. Love the deep red colour of the chutney. I love to have it with some upma.
