Cheesy Paneer Parcels

Make at home delicious and easy Cheesy Paneer Tikka Parcels just like your favorite Dominos Zingy parcels. Bonus here is the recipe of super quick and easy paneer tikka fuilling that can be used as filling in sandwiches, wraps or rolls, or as a side with chapatis or parathas or even topping for Cheesy Paneer Tikka Pizza.

Here I am today with one our favourite recipes that we relished back in India, Domino's Cheesy Zingy Parcels. After everyone's popular garlic bread and of course Pizza, these cheesy parcels are also liked by most of the people. For there Vegetarian Clients, Domino's India serves this vegetarian parcels stuffed with cheesy and spicy paneer filling. Soft and spongy bread filled with delicious spicy paneer, is served as side, along with pizza and garlic bread.

Kids love such cheesy snacks and you can make these for there snacking. lunchboxes or even for their parties.

No Yeast Cheesy Parcels

The outer covering or parcels are made with soft and spongy bread, which is made with yeast. If you avoid yeast for breads or are skeptical in making bread using it. or because of the current situation you cannot get yeast in stores, you can still try this delicious snack. My last post was No Yeast Bread, where we can make bread without using yeast. Certain breads that require yeast and proofing can also be made without it using substitutes . Baking Powder and Baking Soda along with yogurt or buttermilk are the best substitutes for yeast free breads. Though you won;t get the same texture and lightness but for certain breads that can be a good option.

In Indian Cuisine traditional versions of Naan Bread, Bhature and Kulcha can be made without yeast.

The right mix of dry and wet ingredients along with leavening agents gives soft and spongy breads.

Quick and Easy Paneer Tikka Filling

You can use any of your favourite fillings for these parcels. Vegetarian filling with mixed veggies or paneer, and , Non-vegetarian with chicken or minced meat, all go well in these parcels.

I have used my own easy version of Paneer Tikka filling that I make many times for sandwiches or as a simple side with dal and chapatis. No marination, no grilling of tikkas, super quick and easy.

With basic ingredients available in your pantry you can make this flavorful paneer filing.

Paneer or Indian Cottage Cheese, is a favourite ingredient in India homes. Majority of Indians are vegetarians and it one of the main source of protein and calcium after lentils.

A versatile ingredient, Paneer can be used in uncountable ways in Indian Cuisines. Main Course, Snacks, Desserts or as Filling in flatbread, use in any way your like as per your preference.

Since Paneer is made from dairy milk, those who have lactose intolerance should avoid it. Also, for vegans, Tofu is a good substitute for paneer and can be used in many dishes.

Easy Paneer Tikka filling

P for Paneer is this Monday's theme for our Foodie Bloghop Group.The theme with this versatile ingredient was suggested by Sujata Roy, who blogs at Batter Up with Sujata. Her blog is a must checkout for traditional Bengali cuisine, healthy bakes with nutritious flours and so many other easy and quick recipes from Indian and International cuisine. For the theme she made this delectable curry with ABC Curry/Almond Beetroot Cottage Cheese Curry.

Let's see how to make these Cheesy Paneer Tikka Parcels(No Yeast)

Making these parcels requires two main steps. First one is making the parcel covering and second one os making the filling.

Make Outer Parcel Covering

Parcel covering is made with All Purpose Flour(Maida), but I have used here Whole Wheat Flour, along with Sooji/Semolina. I like to add sooji/semolina to many of the bakes that I do with Whole Wheat flour. It adds to the softness in dough. Also, added oats flour here, which makes it more nutritious.

As mentioned above baking powder and baking soda are used as leavening agents along with buttermilk(milk+vinegar).

Milk Powder and Yogurt here are optional. You can skip those. I add as these give additional softness to whole wheat dough that has higher content.

To make outer covering knead a soft and pailabe dough and keep it covered for about 30 mins.

You can use Pizza Dough (store bought or homemade-Whole Wheat Pizza ) to make parcels in case you want to skip it making from start..

Make Quick Paneer Tikka Filling

For filling I have used basic spices available in your spice box/pantry. Checkout recipe card for details on ingredients.

For Tikka sauce you can use thick/greek yogurt/sour cream/mayonnaise.

Cook Paneer cubes in spices and cool completely before filling.

Equipment

  • Pan for frying Paneer Cubes
  • Mixing Bowls
  • Oven to Bake Parcels

Ingredients
  

For Parcel Covering

  • 1 Cup Whole Wheat Flour
  • ¼ Cup Semolina optional
  • ¼ Cup Oats Flour optional
  • ¼ Cup Milk Powder
  • ¼ Cup Yogurt/Curd
  • 1 Cup Milk for Buttermilk
  • 1 tbsp Vinegar(Apple Cider) or use any
  • 1 tsp Baking Powder
  • ½ tsp Baking Soda
  • 1 tsp Salt
  • 1 tsp Raw Cane Sugar/Honey
  • 2 tbsp Oil

For Quick Paneer Tikka Filling

  • 1 Cup Paneer/Indian Cottage Cheese cut into cubes
  • ½ Cup small cubed mixed bell peppers and onions optional
  • ½-¾ Cup Greek or Thick yogurt/Sour Cream or Mayonnaise or use as required
  • 1 tsp Garam Masala
  • 1 tsp Chaat Masala
  • 1 tsp Red Chilli Powder
  • ¼ tsp Turmeric Powder
  • ¼ tsp Ajwain Seeds
  • ¼ tsp Dried Mint Leaves optional
  • ½ tsp Dried Fenugreek Leaves/Kasuri Methi
  • Salt as per taste
  • 1 Cup Grated Cheese or as required

Instructions
 

Make Parcel Covering

  • Make buttermilk. Mix vinegar in milk and let it stand for about 5 mins.
  • In a mixing bowl, add all three flours along with milk powder, baking powder and baking soda and salt.
  • Then add yogurt and mix well and leave for 5 minutes.
  • Now add buttermilk and mix everything together.
  • Add oil now on the dough and knead it to soft and paliable dough.
  • Cover it damp muslin cloth and keep it to rest for at least 30 mins.

Make Filling

  • To make tandoori sauce, add yogurt in a bowl. Mix Chaat masala, Dried Mint leaves, Ajwain seeds about ¼ tsp of Salt, ½ tsp Red Chili powder, and ½ tsp of Kasuri Methi(dried fenugreek leaves). Reserve the leftover of spice powders for frying paneer.
  • In a pan heat oil, add garlic paste(optional), garam masala,turmeric powder, rest of the red chilli powder, fenugreek leaves and salt. Keep the flame to low.
  • Cook for a minute then add paneer cubes, nicely coat in spices. You can add a tbsp of tandoori sauce.
  • Add mixed bell peppers and onion cubes.
  • Add kasuri methi and salt and mix well.
  • Take out in a bowl and let it cool completely.

Make Parcels

  • Preheat, oven to 375°F or 190°C.
  • To make parcels, divide dough into 8-9 equal portions.
  • Roll out each portion thinly in a circular disc. Please refer the video.
  • Now as shown in video, fold the sides and make a triangular shape.
  • Spread some sauce and then add paneer cubes, sprinkle some cheese.
  • Then fold from the edges sealing it parcel form. Do it carefully, you can apply little water as the edges may open while the parcels are baking.
  • Brush with melted butter. You can add garlic powder, red chilli flakes and parsley(optional).
  • Bake in preheated oven for about 20 mins.
  • Once done, take out, brush with more butter and seasoning (C½haat masala or Italian seasoning) and serve hot.

Notes

You can substitute all the flours with All Purpose Flour(Maida). Or, use any of the flour combinations. Total flour used should be 1½ Cup.
Substitute for Yogurt-- 1/2 cup milk.
Milk Powder optional.
For filling you can skip Indian spices and add Italian seasoning.
Chaat Masala, Kasuri Methi/Dried Fenugreek Leaves are available at Indian Grocery stores.
You can use Pizza Dough (store bought or homemade) to make parcels in case you want to skip it making from start..

    These paneer parcels look so cute that no one - kid or adult - can resist them! I absolutely love this recipe. We like paneer at home, but I often run out of ideas to use them. I'll definitely be trying these out - a no-yeast recipe is just perfect for a beginner baker like me. 🙂
