One of the easiest snack or appetizer with the goodness of ripe tomatoes, extra-virgin olive oil herbs like basil, Bruschetta..
What is a Bruschetta..
Bruschetta is an appetizer from Italy that consists of a good bread rubbed with garlic in olive oil, topped with tomatoes, basil and grilled cheese. It is a classic appetizer that is now popular not only in Italy but all around the world. Topped with fresh mozzarella or any other cheese of your choice is a hit among all the age groups.
In local Italian language Bruschetta is an antipasto(appetizer) which forms the second course of meal of the Italian meal structure.
Italian Meal Structure is the theme for #98Blogging Marathon, week 1. For detailed read on what all is there in Italian Meal structure click here.. Lot of other online resources are also available that give a clear picture of Italian meal structure.
What we need for basic Bruschetta..
- Juicy ripe, tomatoes.
- Crusty bread like Ciabatta/Baguette, to hold the juicy tomatoes.
- A good quality extra-virgin Olive oil.
How to make..
Deseed tomatoes, cut into small cubes. Toss in with chopped basil and olive oil, black pepper and salt as per your taste. Set aside for 20-30 mins.
Brush bread with olive oil, toast till light golden and top with tomato topping.
Variations for Bruschetta..
- Fresh Mozzarella cheese is most popular topping for Bruschetta. Goat Cheese, fresh Ricotta or Mascarpone can also be used for the toppings.
- Add finely chopped bell peppers, olives, avocado .
- Herbs like Thyme, Oregano, Cilantro. Yee, I use Cilantro/fresh coriander leaves many times and we love the fresh taste that imparts to tomato topping.
- Many like to add finely chopped onions. Add sweet red onions, else it can spoil your bruschetta.
- Add some fruit flavoured Balsamic Vinegar for the fruity kick!!
- Top it with cheese grill till the cheese melts. Kids love this pizza version of bruschetta.
Let's see how I make Bruschetta..
