Carrot and Cucumber Mini Sandwich bites are filled with delcious filling of cream cheese and grated carrot and cucumber. A perfect light snack with some juice or drink.
These Carrot and Cucumber Mini Sandwich bites are a great snack for breakfast, packing in kids lunch box, serving at party or get-togethers or take along on a picnic. A no fuss recipe, which you can also make with your kids.
Sandwiches especially the non-grilled ones make great snack especially in summers. Kids love these light sandwiches. These sandwich bites can be made in advance and kept in refrigerator, whenever the kids are hungry they can eat these with any fruit juice of their choice. My hubby too likes these kind if light sandwiches and I often pack these when we travel or go for outing.
Ingredients..
Here I have used white sandwich bread. You can use brown bread or sandwich thins too. Any soft bread will be good to make these.
Cream Cheese, carrots and cucumbers. You can add some fresh finely torn mint leaves for a refreshing flavour.
How we make these sandwiches..
- Cut the side of the bread.
- Grate carrots and cucumbers. Squeeze water from cucumber.
- In a bowl take cream cheese, mix grated carrots, cucumbers and seasoning. For seasoning use any that your prefer. You can use pizza seasoning, dried basil or oregano and chilli flakes or even chaat masala. Add the salt in filling as per your taste.
- Spread softened butter on the bread slices.
- Spread the filling on bread slices add some coarsely grind black pepper and cover one bread with the other.
- Cut into quarters or ini triangles.
- Keep covered until served. If we leave these open the bread starts to dry out. Wrap in cling film/butter paper and store in refrigerator if making ahead.

Sandwiches are so versatile you can play around with fillings and enjoy light and yummy snack anytime of the day. Use veggies like finely chopped bell peppers, boiled corn, tomatoes, finely shredded cabbage or lettuce.
Cream cheese is great option to use as filling in sandwiches. I use it in paranthas as spread, filling on sandwiches and is used as dip with veggies, chips or nachos.
Do make these yummy sandwiches. Kids vacations are going to start within next few days and will be making these kind of light snacks to keep their hunger cravings away. These are one of the best options to carry along while travelling for a day.
