Sev Puri Recipe | Learn how to make Sev Puri , Indian Style Street Food recipe
Sev Puri is one of the most popular street food which is loved by all the age groups. It is a tangy, sweet and spicy Chaat/Snack. Crispy papdis, boiled potatoes, chutneys for chaat and nylon sev make it a medley of flavours that tantalizes the taste buds.
Sev puri is a popular street food from Maharashtra that is known to be originated in Pune city(source :Google) It is not only relished as street food but also enjoyed as evening snack or served to guests as appetizer or starter. It is very easy to assemble and serve if we have all the ingredients ready at home.
In India chaats are very popular snack for evening and people love to gorge on plateful of these. Bhel puri, Pav Bhaji, Vada Pav, Aloo Tikkis, Bhalla Papdi(Dahi Bhalle/Vade served with papdi) are few of the famous chaat items. There is variation in the chaat recipes across India. Like Aloo Tikki with Chole(chickpeas) is famous in North India and Ragda Patties is from Mumbai/West India.
When it is festival time or get togethers you will find atleast on chaat item in the menu.
Sev Puri/Papdi is my one of the favourite chaat recipes that I love to serve to my guests and we also enjoy on weekend evenings. My kids love Sev Papdi. My teenage daughter likes it with spicy chutney and son like to have it with sweet tamarind chutney.
What is Sev and Puri
Sev is deep fried chickpea noodles. There is lot of variation in sev recipes. For Sev Papdi, very thin sev known as Nylon Sev are used. You can buy pack of Nylon Sev from Indian Grocery store or order from amazon. Also, if you have Sev Making Machine, you can easily make it at home also. Will soon update the recipe.
Puri is Papdi. In Maharashtra it is known as Puri whereas in North India it is known as papdi. It is crispy deep fried Indian cracker made with flour. Store bought papdis are usually deep fried. Incase you want less oily, you can bake at home or buy the baked ones.

Most of the times I keep a batch of these Crispy Masala Papdi(Air Fryer and Baked) with whole wheat flour for kids snacking or our tea time and also use it to make Sev Papdi chaat or bhalla papdi.
Ingredients for Sev Puri
To make sev puri the ingredients like Papdi and Sev can be store bought or can be homemade. Other ingredients like Chutneys for Chaat nowadays are available in markets. But I prefer to make the chutneys especially at home.
Puri/Papdi- Crispy deep fried or baked papdis.
Sev - Prefer Nylon Sev, if not available any thin variety sev. You can make it at home too. Soon will update the recipe.
Boiled Potatoes and Sprouts- Usually potatoes are preferred by people but to add a bit of nutrition , you can add sprouts like moong sprouts. Check here how to Sprout beans and legumes at home.
Chutneys- The basic chutneys used in chaat recipes and in Sev Papdi are Green Chutney(Cilantro and Mint Chutney), Tamarind Chutney, Chilli Garlic Chutney. It is very easy to prepare these at home. Tamarind chutney and Chilli Garlic Chutney recipe to be updated soon. You can also use Rajasthani Lehsun ki Chutney in case you want the recipe for chilli garlic chutney. This chutney is equally fiery and spicy.
Other Ingredients-- Chaat Masala, Black Salt, Red Chilli Powder(optional) Pomegranate Pearls, finely Chopped fresh coriander/cilantro, finely chopped Onions.

Equipment
- Mixing Bowl
- Mixing Spoon
- Plates to serve papdi
Ingredients
- 36-40 Papdi or Homemade use as required
- 1 Cup Nylon Sev or use as required
- 1 Cup Boiled Potatoes
- ½ Cup Sprouts washed and steamed
- Tamarind Chutney use as required
- Green (Cilantro and Mint) Chutney use as required
- Garlic Chilli Chutney (optional) use as required
- ½ Cup Finely Chopped Onions
- ½ Cup Finely Chopped Tomatoes I didn't use
- 2-3 tbsp Finely Chopped Cilantro/Coriander
- Red Chilli Powder
- Chaat Masala
- Black Salt
Instructions
- In a plate arrange papdi/pooris around 5-6 for one person. Or if making for gathering arrange as many papdi on a plate/serving dish.
- MAsh and mix potatoes , onions and sprouts. add some chaat masala , red chilli powder and salt. Add as per taste. Add tomatoes also if you are using.
- Add potatoes and sprouts mix on papdis.
- Then add chutneys about 1-2 tsp or as required.
- Add more onions and tomatoes on top. Sprinkle chaat masala, red chilli powder if you want.
- Sprinkle lot of sev and sever immediately.
Do try this Sev Papdi recipe at home, for your daily snacking or during festival time like Holi and Diwali or when guests visit. You can serve it for Tea time or even at parties.
