Sugar-free, fat-free Rice Krispy treats!! Yes you heard me right. These Rice krispy treats are no-bake with dates ,figs and walnut and chia seeds perfect those times when you need something to munch on or in between meal food cravings.
It's Day 2 for Week 4 of #96 Blogging Marathon, the theme for this week is How about elevenses?. Elevenses is a short break taken at around 11 a.m. to consume a drink or snack. The name and details vary between countries. Chana Murmura was the first post for this theme. These Date and Fig Rice Krispy Treats are perfect for those times. Light and fulfilling!! I had planned to make Date and Fig Oats bar for the theme but then noticed that I ran short of oats, had some rice krispies in the cupboard, added these instead of oats and here I had the crunchiest no bake, sugar-free energy bars.
Dates and Figs are one of the richest sources of fibres,iron, calcium, vitamins and other minerals. These are rich in natural sugar so can be substituted for white sugar in deserts by those on sugar-free diets. These promote bone strength, brain health and are one of the richest sources of antioxidants.Walnuts and Chia Seeds another superfood that are rich source of antioxidants and Omega-3 fats. Rice Krispies are gluten-free, low in cal and fat-free.
Let's see how I made these healthy, fat-free, sugar-free no bake energy bars..
Dates and Fig Rice Krispy Treats
Ingredients
- 1 Cup Rice Krispies
- 5-6 No. Figs
- 1/2 Cup Dates
- 1/2 Cup Walnuts
- 1 Tbsp Chia Seeds
- 1-2 Tbsp Almond Butter or use Coconut Oil
Instructions
- In a Food Processor,very finely chop dates and figs.
- Add Chia seeds and chop Walnuts finely.
- Add Almond Butter and and mix it nicely.
- Transfer the contents in a microwave safe bowl, and microwave for 30 secs, to warm up the mixture so that it is easy to bind with the rice krispies.
- Mix in the rice krispies with mixture, bind the mixture well and transfer to a parchment paper lined pan and flatten the mixture to level it.
- Keep in the refrigerator for a minimum 30 mins, after that take it out cut into pieces of required size and shape.
Notes
- Incase you don't have almond butter, use coconut oil.
- You can also use instant oats instead of Rice Krispies.
- To make it nut free, add pumpkin seeds or sunflower seeds and coconut oil.
Do make this light and healthy energy bars. Perfect to give to kids in lunchboxes for snack time. So perfect for busy professionals who many times miss on the lunch. So apt while travelling. These are suitable for vegans and are gluten-free.
