Custard Trifle, the Famous English Trifle with layers of Eggless Sponge Cake, Fruits, Custard and Whipped Cream.

Custard Trifle

Custard Trifle is such an easy to put up dessert especially for get togethers and parties. A crowd pleaser that is relished by kids and grown ups alike. It's one of my favourite dessert that I love to make for my friends and family. Simple and so easy to put together if we have all the ingredients ready.

What is Trifle

Trifle is a traditional English Pudding with layers of a sponge cake, thick custard, fruits, jelly and whipped cream. The layers are usually arranged in a big Trifle Pudding Bowl Glass dish with cake at the bottom. The cake or the bread is soaked with fruit juice or wine /alcohol and are known as Tpisy Trifles. Beautiful Trifles are the centerpiece at Christmas Dinners replacing the much denser Christmas Pudding.

Traditionally the vanilla sponge, along with vanilla custard is used for trifle but now a days there are many people also make chocolate trifle, black forest trifle depending on the availability of ingredients , their preferences or for a different variation. My personal favourite is Vanilla Custard Trifle and kids favourite is Black Forest Trifle. Today's post is Vanilla Custard Trifle , that I recently made for potluck party with friends.

How to make Custard Trifle (Eggless)

This Vanilla Custard Trifle is vegetarian recipe, where, the sponge and custard are eggless and gelatin free. Trifle is traditionally served in Trifle Glass dish but you can make individual servings for your get togethers. I normally make it in individual glasses or dessert cups.

The main elements of Trifle Pudding are..

Vanilla Sponge Cake, any Shortbreads or cookies are also used for layering for quick version

Thick creamy Custard,

Jelly/Jam,

Mixed Fruits and

Whipped Cream

Everyone has their own version of making Trifle with different ingredients but basic layering remains the same.

Let's see how I make my version of Custard Trifle

Vanilla Sponge Cake or Yellow Cake or Pound Cake is used for layering. I use Eggless Vanilla Sponge cake . You can also use any store bought good vanilla cake.

Vanilla Custard is one of the most popular dessert in Indian homes. It is one of the desserts apart from traditional desserts like Gajar ka Halwa(especially in winters) or Rabri or Gulab Jamuns(festivals) that was served to guests or for any kind of celebrations. When we were kids, me and my sister loved having chilled custard topped with seasonal fruits.

Mixed Fruits like any kind of berries, oranges, kiwi fruit, grapes whatever one likes. We love strawberries in our puddings be it Vanilla Custard or Chocolate Pudding or this delicious White Chococlate Pudding. I have added finely chopped strawberries, pineapple pieces mixed in orange marmalade. Many people add a tsp of sugar in fruits but I prefer to add jam or marmalade.I do not soak cake in any juice, as the juice released from fruits along with orange marmalade is good enough to add moisture and flavor. Cut fruits and mix about tbsp of orange marmalade( or depending on the quantity of fruits). You can use any other fruit jam like Mixed fruit or any berry Jam(Raspberry Jam) also.

Layer of Whipped Cream is optional, kids love it so I top their pudding glass with it and also add a layer in between. You can use store bought whipped cream(Cool Whip) or make at home whatever is convenient for you.

I have skipped the Jelly layer as I avoid it due to the presence of gelatin. You can use store bought Jelly packs for making jelly and use in Trifle layers.

The whole process is very simple, layer cake at the bottom, top with fruits, add custard layer, top with more fruits and then whipped cream. You can add a layer of whipped cream in between also.

Depending on the size of your serving dish, you can add the layers.

I usually mix some portion of Custard and Whipped cream. This may not be the traditional way of layering but this gives a mousse like effect to pudding. As I said everyone has their own way of making it.

You make cake 3-4 days ahead and freeze it or store in refrigerator. Custard Pudding can be made a day ahead. You can cut fruits, mix with marmalade and refrigerate overnight or few hrs before assembling the dessert. I usually assemble the dessert in morning on the day of serving.

Ingredients
  

  • 10-12 pieces Vanilla Cake Cut into pieces or as required
  • 2 Cups Vanilla Custard
  • 2 Cups Cut mixed fruits (Strawberries/Pineapple/Kiwi/Oranges/Grapes)
  • 2 tbsp Orange Marmalade or any Jam
  • 2 Cups Whipped Cream

Instructions
 

  • Cut Cake into small pieces.
  • Add and mix Jam/Marmalade with fruits and keep aside for 10 minutes.
  • Fold 1 cup wihipped cream in custard. Do not over beat it .
  • Arrange cake pieces in serving bowls, layer it with a tbsp of fruits, top with custard layer and repeat the layers depending on the dish used or your preference.
  • Top with more fruits and whipped cream topping, refrigerate till serving time and enjoy!!
