Moong Dal Idli Recipe | How to make No Rice No Fermentation Idli with Yellow Moong Dal
Instant Moong Dal Idlis are protein rich, light and fluffy Idlis made without fermentation of batter. These soft and spongy Idlis are made with Yellow Moong Dal without any rice or fermentation of the batter and have less than a tbsp of oil.

Protein rich Moong Dal Idlis can be served for breakfast, packed for light lunch with your favorite chutneys. Smear in ghee and idli podi(dry chutney for idlis and dosas)
Idlis are steamed cakes made with fermented rice and lentils batter( traditonal way). But nowadays there are so many variations for Idli recipes. We can now make Idli not only with lentils and rice but also use Rava(Semolina), only lentils, Quinoa and different millets to make these healthy bites. Instant Idlis can be prepared using curd with a leavening agent like baking soda or with ENO (fruit Salt), used for relieving acidity.
Moong Dal Idlis
These Moong Dal Idli are one such variation of Idli which needs no fermentation. And if we have already soaked moong dal, it can be made within 30 mins.
To make these more health friendly, I have also added grated carrot and zucchini.
Light and fluffy Moong Dal Idlis are ideal to feed to kids and the elderly in the house.
Moong Dal considered light on stomach and easily digestible. Moong dal water is introduced to babies as one of the first food when their weaning starts. Patients with upset stomach are also fed moong dal/khichdi and also recommended in post operative diet when the digestive system is weak.
Ingredients to make Instant Moong Dal Idlis
Moong Dal/Yellow Moong-- also known as Skinned Split Green Gram Lentils. For light and fluffy idlis, soak dal for at least 3 hrs. Or, overnight is also good.
Yogurt/Curd- Sour Curd/Yogurt is optional. But I like to add to my Instant Idli recipes as it adds a sour fermented taste to idlis. It also keeps Idlis soft and moist.
Eno Fruit Salt- You can ask Why Eno in Idli batter?? It adds fizz and makes the batter aerated and bubble up. This is mainly makes the Idli light, spongy and fluffy.
Herbs- Ginger, Green Chilies, Fresh Coriander/Cilantro.
Salt as per taste.
Optional Ingredients- I have also added grated Carrot and Zucchini. You can also add steamed peas and sweet corns.
To temper the batter- Oil(1-2 tsp), Curry Leaves, Mustard Seeds(Rai) and Chana Dal(Dalia), finely chopped cashew nuts( I skipped these).
How to make Moong Dal Idli
To make Idlis we need Idli Steamer. It is a special utensil/cooking equipment which has cavities where we put Idli batter for steaming. It is available Online at Amazon.

- To make soft fluffy spongy Idlis, soak moong dal for at least 3 hrs.
- Drain the water nicely.
- Grind with ginger, green chilies. Add very little water( 1-2 tbsp) if required.
- Transfer the batter in a mixing bowl.
- Add yogurt and mix well. Keep the batter covered for about 15-20 mins.
- Next add grated carrot and zucchini and salt.
- Also prepare the tempering and add to the batter.(Check recipe card)
- Mix well.
- Prepare the steamer. Boil water and lightly brush the idli molds with oil .
- Now just before transferring the batter to idli mould, add Eno and mix well.
- Add about a tbsp in the idli moulds.
- Cover the steamer and steam idlis for 10-12 mins.
- Once done, take out and let it sit for 1-2 mins. Then take out idlis carefully using a spoon.
Moong Dal Idlis
Equipment
- Idli Steamer
- Mixing Bowl
- Mixing Spoon
- Grinder/High Speed Blender
Ingredients
- 1 Cup Yellow Moong Dal
- ¼ Cup Curd/Yogurt
- 2 tbsp Grated Carrot
- 2 tbsp Grated Zucchini
- 2 tbsp Finely Chopped Coriander/Cilantro
- 1" Fresh Ginger
- 1-2 Green Chilies
- 1 tsp Eno
- Salt to taste or 1 tsp
For Tempering Batter
- 2 tsp Oil
- 1 tsp Mustard Seeds(Rai)
- 7-8 Curry Leaves
- 1 tsp Chana Dal(Dalia) or Urad Dal
Instructions
- Soak moong dal for at least 3 hrs. Drain the water completely.
- Grind with ginger, green chilies. Add very little water( 1-2 tbsp) if required.
- Add yogurt and mix well. Keep the batter covered for about 15-20 mins.
- Next add grated carrot and zucchini and salt.
- Prepare the tempering and add to the batter. Mix well.
- Prepare the steamer. Boil water and lightly brush the idli molds with oil .

Prepare Tempering
- Heat 2 tsp oil in tadka pan.
- Add mustard seeds and once it crackles add Chana Dal(Dalia) sauté for few seconds.
- Add curry leaves.
- Then add the tempering to batter.
