Chenna Burfi

Looking for an easy mithai/dessert recipe for a quick dinner party or festivities something gets ready in no time and is equally delicious in taste. Desserts and sweets form an integral part of celebrations in every culture. In these busy times on special occasions all we want is some quick and easy fixes that are homemade and have authentic traditional taste. Traditional Indian sweets are mostly milk based that require long process of thickening milk and then setting it.

This Chenna Burfi gets ready within 15 mins, and tastes just like the one from your neighbourhood Mithai shop(traditonal Indian Sweet sweet shops).No fancy ingredients are required for this, just fresh paneer, cream, sugar, nuts and cardamom for flavor. Chenna is fresh Indian Cottage Cheese and Burfi is a kind of fudge that can be milk based or any flour like chickpea flour based. There are many versions of burfi that we Indians make, will gradualy update posts on those.

For making this Burfi we need fresh Chenna/Paneer. You can use store-bought or homemade paneer. For homemade Paneer, boil 1L or 4 cups of milk in pan. When the milk starts to boil add mix of 1 tbsp of vinegar+ 1/2 lemon juice. Let it stand for a minute. The milk will curdle and milk solids will separate. Strain the milk solids and keep the whey for later use. It can be used for making curries, soups or kneading dough for breads. Refer my Mini Rasgulla Kheer recipe for detailed method for making chenna/paneer. If using store-bought paneer, grate it finely for use. I still have to do a detailed post on how to make Homemade Paneer.

Let's start to make this quick and easy burfi/fudge.

Assemble all the required ingredients. 1 cup fresh Paneer, 3/4 cup milk powder, 1/2 cup cream*,1/4 cup of sugar,1/2 tsp cardamom powder*. I keep my sweets and deserts moderately sweet.If you need more sugar you can add 1-2 more tbsp.

Very finely chop the nuts.

Take a dish in which you want to set it. Grease it well. I used these pie dishes,you can use any baking tin. Use any square or rectangular 6" cake tin.

Dish used for barfi
Prepare pan

*for cream.. if you are in India use Amul cream and those in USA or European countries can use any good brand heavy whipping cream.

*Substitute for cardamom--use a pinch each of cinnamom and nutmeg.

Take a heavy bottomed /non-stick pan, keep it on medium flame.

Add all the ingredients to it one by one and mix well.

Keep on stirring and cooking the mixture till it starts to thicken.

One the mixture starts leaving the side, transfer it to the greased pan and level it properly, spread finely chopped nuts.




Keep it in refrigerator for 2 hrs. Once the burfi sets nicely, take out and cut into sqaures or triangles.

Fresh Paneer Burfi made with just 3 simple ingredients,quick,easy and simple

Ingredients

  • Fresh Paneer (Indian Cottage Cheese)-1 cup
  • Milk powder- 3/4 cup
  • Sugar- 1/4 cup
  • Cream- 1/2 cup
  • Cardamom (Elaichi) powder-1 Tsp
  • Finely chopped mixed nuts(Almonds, Pistachios,Cashew nuts)

Directions

  1. Combine all the ingredients in a non-stick pan.
  2. Cook over a medium flame, stirring continuously for around 10 to 15 minutes till the mixture thickens and leaves the sides of the pan.
  3. Spread onto a well greased any rectangular or square 7" or round dish of 6-7" in diameter. Cool and cut into pieces.
  4. Garnish with finely chopped mixed nuts.
  5. Keep in refrigerator to chill for at least 2 hrs before serving.
