Best Vegetable Chowmein recipe| Learn how to make perfect Street style Chowmein with the veggies of your choice.
Vegetable Chowmein is the classic noodle dish made with wheat flour noodles stir fried with vegetables and Chinese sauces.
It's spicy scrumptious dish, a crowd pleaser and hit for parties, potlucks and gatherings or even weekend meals.
About the recipe
Wheat Flour (Maida/All purpose flour Noodles) stir fried with crunchy vegetables and sauces, gives one of the most loved dishes which is filling, hearty and so scrumptious.
It is quite an easy and fuss free dish, if we have chopped veggies in hand.
A must-have item for kids birthday parties, get-togethers and even for potlucks and picnics. For moms, it can be a good way to sneak in vegetables along with noodles which kids eat way happily.
Why we love Chowmein
Who doesn't love Chowmein?? A lip-smacking and filling meal favorite among all age groups that can be had just as it is or with side dishes like Veg Manchurian or Chilli Paneer. In India, it has become one of the most popular street food and ordered item at dine-ins.
Chowmein is
- easy and quick 10 min recipe if we have chopped vegetables in hand
- crowd pleaser, kids love it
- can be made for big gatherings
- vegan and can be made gluten-free
Even in US, I see Chinese Cuisine is quite popular. But it is little different from Indian Chinese or Indo-Chinese as it is popularly.
Indo-Chinese is more spicy due to more heat added as we Indians love spicy food and we can give an Indian makeover to any cuisine of the world. 🙂
How I first made Chowmein
I still remember the first time I made Chowmein when I was around 14 years old. We were introduced to these delicious noodles by our Masi(aunt) who liked trying out new recipes and whenever we met her treated us with her delicious treats. The Eggless, Gelatin-free Chocolate Pudding on my blog and is her recipe only. So when I thought of trying these noodles by myself. I added only the vinegar and tomato ketchup as totally forgot to buy Soy sauce from the market. Also, the noodles were a bit sticky.. My younger sister's few friends were home that day and we all happily gobbled up everything bit of the noodles. The result was not that bad but I know something was missing :). And I realized that I didn't put Soy sauce as I totally forgot to get it with my list of ingredients 🙂
Later, I tried many recipes and after a few batches of sticky or sometimes undercooked noodles, I finally started making perfect Chowmein which everyone in my family and friend's circle love.
Ingredients to make Chowmein
What type of Noodles to use for making Chowmein
Usually dried noodles are used to make Chowmein. Ching's Noodles(an Indian Brand of Noodles available in Indian/Asian Grocery stores) quite popular in India for making Chowmein.
You can also use Wheat Egg noodles, Angel hair spaghetti . I preferred using this when I lived in USA. Any other kind of noodles of your choice like Soba Noodles and Rice Noodles(Gluten-free) are also fine. Nowadays, noodles made with millets are also gaining popularity. You can use these also in the recipe.
In India especially in Delhi, many local shops sell some pre-cooked noodles. Though these are made of Maida/All Purpose Flour but are very good to make Street Style Chowmein.
Vegetables and Sauces to use in making Chowmein
Vegetables- The commonly used vegetables for making are cabbage any color, any color of bell peppers( red, yellow or orange), green capsicum, carrots and onion. These veggies not only add color to the blend and plain boiled noodles but add the much-needed crunch. You can also add mushrooms or bean sprouts.
Garlic and Spring onion Veggies add so much flavour and a must add must in my Chinese dishes as it imparts a characteristic taste and aroma to the dishes.
Sauces- Soy Sauce, Siracha or Garlic Chilli Sauce, Vinegar. In India we also add a small amount of tomato ketchup and green chilli sauce.
For Gluten-free option you can use tamari sauce in place of soy sauce.
How to make Chowmein
To make Chowmein, noodles are stir-fried at high heat to retain the crunch. If we are careful while frying vegetables, we can have the nice crunch in our noodles.
Pro-tips to make perfect non sticky Chowmein
To the get the perfect non-sticky noodles we can keep a few pointers in mind while boiling the noodles and frying the veggies.
- Take sufficient water in a big pan to boil noodles.
- Add noodles to high boiling water.
- Cook noodles al-dente we read many times that is cook noodles till these are little uncooked. After 10 minutes of boiling or as per instructions on the noodles pack, with some take out a noodle and press between the index finger and thumb. I should be little uncooked.
- Drain the noodles in a strainer and run under cold water. The cold water stops the further cooking of noodles. Overcooked noodles get sticky.
- Spread the noodles in a plate or on chopping board and coat noodles with 1-2 tsp of oil. Use your hands to evenly coat the noodles.
- Stir-fry the vegetables and noodles on high heat.
- Keep everything ready before starting to cook the noodles.

Serving Suggestions
Chowmein can be enjoyed just on its own or with any of the sides likes Veg. Manchurian, Chili Paneer, Basil Chilli Paneer (Gravy).
The recipe is adaptable to one's preferences you can add the veggies and adjust the sauces. Kids love to take these for their lunch and an ideal dish for potlucks and parties.

Vegetable Chowmein
Equipment
- Work/Kadhai/Pan
- Pan/Pot to boil noodles
- Knife
- Peeler to peel carrots
- Chopping Board
- Mandoline
- Measuring Cups and Spoons
Ingredients
- 1 Pack Angel hair Spaghetti or any good noodle (500g /14-17 oz.)
- 1 medium Onion(thinly sliced)
- 1 cup Mixed Colored Bell Peppers
- ½ Cabbage(green/purple)thinly sliced/shredded or 1 small
- 1 Carrots
- Spring Onions greens few for garnish
- 4-5 Garlic Cloves
- 2 tbsp Soya Sauce
- 1-2 tbsp Siracha/Ginger Garlic Sauce or Red Chilli Sauce (as preferred)
- 1 tbsp Tomato Ketchup
- 1-2 tbsp White Vinegar/Apple Cider Vinegar
- 1 tsp Black Pepper freshly grinded
- 1 tbsp Oil(Peanut/Sesame/Olive) to coat noodles
- 2-3 tbsp Oil(Peanut/Sesame/Olive) for vegetables
- Salt as per taste
Instructions
Prepare/Boil Noodles
- In a pan take 6-7 glasses of water.
- When the water starts boiling, add the noodles and cook for 7-8 minutes as per the packet's instructions, till al-dente or little uncooked, not soft and mushy1 Pack Angel hair Spaghetti
- Drain the noodles in a strainer/colander and run under cold water to stop the cooking process.
- Spread the noodles on a plate or board to cool.
- Add a tsp of oil and toss noodles with hands to coat oil uniformly on the noodles and keep aside. This way noodles won't stick even if kept for long. Keep it covered till further use.1 tbsp Oil(Peanut/Sesame/Olive)
Make Chowmein
- Chop finely or coarsely grind garlic in a motor pestle. along with green chili (if you are adding). I didn't use any green chili.4-5 Garlic Cloves
- Shred the vegetables thinly or in long strips. You can use knife or a mandoline for the same.1 cup Mixed Colored Bell Peppers, ½ Cabbage(green/purple)thinly sliced/shredded, 1 Carrots
- Keep all the other veggies and sauces ready.
- You can mix and keep all the sauces ready in a bowl. Here I have added one by one just for the demo pics.
- In a wok or pan, add oil, when the oil hot add garlic and sauté for a few seconds, add onions.2-3 tbsp Oil(Peanut/Sesame/Olive), 1 medium Onion(thinly sliced)
- Sauté onions till these start turning pink.
- Add the bell peppers and keep stirring. Cook for 1-2 minutes. I didn't add carrots this time as I didn't have any, you can add julienned carrots along with bell peppers.1 cup Mixed Colored Bell Peppers, 1 Carrots
- Add cabbage at last, as it cooks very fast. Keep stirring the veggies.½ Cabbage(green/purple)thinly sliced/shredded
- Add sauces and mix well. Also add salt. Check the amount of salt you are adding as, the sauces already have some amount of salt.2 tbsp Soya Sauce, 1-2 tbsp Siracha/Ginger Garlic Sauce, 1 tbsp Tomato Ketchup, 1-2 tbsp White Vinegar/Apple Cider Vinegar, Salt as per taste
- Add noodles and stir fry on high flame, stirring continuously.
- Once the noodles are coated with sauces and mixed nicely with veggies.
- Add black pepper. Take off the flame and garnish with spring onions/scallions.1 tsp Black Pepper, Spring Onions greens
Notes
- replace Soy Sauce with Tamari Sauce. IF no diet restrictions you can also use fish sauce.Â
- Gluten-free noodles like Soba Noodles and Rice Noodles can also be used for making Chowmein. Nowadays, noodles made with millets are also gaining popularity. You can use these also in the recipe.
