Festivals are a great time to celebrate the traditions and enjoy with your family and friends. With celebrations, comes a lot of work in doing all doing all the preparations. and all we want is something fresh, quick n easy, traditional with authentic taste. Make these 2 ingredients Coconut Ladoos that are perfect rescuers for your last minute preparations when you want to whip up something traditional without spending hours in the kitchen.

What are Ladoo/s

Ladoos are kind of truffles or variation of fudge made in different ways using different ingredients.

Traditionally, Coconut ladoos are made with khoya and unsweetened desiccated coconut but making khoya is a long process where milk is reduced to khoya/mawa by cooking it for long hours and then desiccated coconut is added along with sugar and cardamom powder to reduced milk solids along with some ghee and shaped into ladoos or burfi. This recipe of Coconut ladoos cuts short the cooking time and is ready under 10 minutes. A perfect recipe for the novice cooks or the beginners!!

Let's quickly see how to make these delicious ladoos!!

To make Coconut Ladoo, I used desiccated coconut(available at grocery stores), sweetened condensed milk and cardamom powder. Cardamom powder gives a nice aroma to ladoos. It is optional, ladoos will still taste good if you don't have cardamom powder.

Roast coconut lightly in a non-stick or heavy bottomed pan, till very light brown, till it gives the aroma, with a tsp of ghee(clarified Indian Butter), you can roast without ghee also. Take care the coconut doesn't get too brown. Keep the flame to low.


Add condensed milk and cardamom powder to the pan and keep mixing and stirring until the whole mixture comes together like a soft dough and leaves the sides of the pan. Switch off the gas when you add the condensed milk.


Take out the mixture in a separate dish to cool. When slightly warm, roll in walnut sized balls and roll in desiccated coconut. you can decorate it with almond or pistachios also.

Equipment

  • Heavy bottomed Pan
  • Laddle
  • Plate/Dish

Ingredients
  

  • 2 Cups Desiccated Coconut-
  • 200 gm Condensed milk ½ can
  • tsp Cardamom Powder
  • 1 tsp Ghee(Clarified Indian Butter)

Instructions
 

  • In a non-stick or heavy bottomed pan, roast 1.5 cups of coconut with a tsp of ghee(optional) on low flame till very light brown or starts giving the aroma.
  • Keep aside the other remaining half cup of coconut for rolling the ladoos.
  • Add condensed milk and cardamom powder and switch off the flame. Keep on stirring till the mixture becomes like soft dough.
  • Take out the mixture in a separate dish to cool.
  • When slightly warm, roll in walnut sized balls and roll in desiccated coconut.
  • Decorate it with silvered almond or pistachios if you want.

    I find making these coconut ladoos the easiest, it hardly takes much time and they taste so great. I usually make them for my Lions Club dinner parties as a dessert.
