How to make Paan Gulkand Shake/Restaurant Style Paan Shots, Detailed Recipe with Video instructions

About the Recipe
This Paan Gulkand Shake Recipe is inspired from the legendary Jiggs Kalra's Paan Shots that are a part of the menu at one of his famous Dine's in India(Punjab Grill). We love the Paan Shots that are served at the end of meal. These not only fill in for the dessert option but are also good for digesting all the heavy food consumed.
My kids love this Paan Shake and I make it quite a few times during summers. In India Paan/Betel Leaves are easily available in the local market. In the USA you can find these at the local Indian Grocery store (like Patel Brothers).
For those who do not know about this Indian Paan Shake it is , Betel Leaves blended in milk along with rose petal jam(gulkand), fennel seeds and nuts. Serve it with soaked basil seeds(sabja) and increase the taste nutritional benefits.
Ingredients to make Paan Milkshake and Benefits
Paan/Betel Leaf- Paan leaves are bright green in color and heart shaped. These are used in Indian culture since ancient times. Betel leaves are not only eaten as condiment/mouth freshener after meals but also used in auspicious prayer ceremonies and festivals. These are also loaded with nutrients( Vit. C, Calcium, Carotene, Thiamine) that good for health. Paan leaves have been used in ancient ayurveda for it's curative and therapeutic properties.
Choose Bright green leaves, don't use any leaves with spots or discoloration.
Gulkand- Known as Rose Petal Jam in english, gukland also has upteem health benefits. It has Vit. B complex and is known for curing mouth ulcers. It relieves the constipation and is beneficial in fatigue and stress. It is also known to be good for eyes and has digestive properties. Due to it's cooling properties, gulkand is consumed in summers in India in water/milk as shakes and in desserts(mithai) during festival time.

Fennel Seeds- Saunf or fennel seeds not only add taste but also enhance the digestive properties. These have cooling properties and reduce the body heat.
Basil Seeds- Sabja Seeds or Basil Seeds are just like chia seeds. These form a gel like covering when soaked in water. Basil seeds are a lifesaver when it comes to keeping our bodies cool during summers. Since ancient times in India, Sabja has been used in summers. These also aid in weight loss, relives the constipation, acidity and heartburn. Due to the high content of iron, Vit. K, protein these are also known to be good for hair growth. Also, due to high fibre content, these recommended as part of weight loss diets.
Milk- all of us are well aware of the health benefits of milk. It is a rich source of calcium and protein along with other nutrients. Use dairy or plant milk (almond as per your preference).
Soaked Almonds- I have also added soaked almonds to add richness to the shake as I am not using any cream here.
Jaggery Powder- To balance the sugar if you feel the shake is less after adding gulkand.
How to make Paan Gulkand Shake
To make the shake first puree paan leaves with gulkand, soaked fennel and almonds. Peel almonds before adding.
Add sugar/honey or maple syrup only if required.
While pureeing paan leaves add an ice cube.Grinding action may heat up the paan puree, and it may get discolored a bit.
Next, add milk and then blend again.
To serve add soaked basil seeds(1-2 tsp) in a glass then add shake.
Serving Suggestion
For more fun and delicious kids treat, add scoops of vanilla ice cream top with more basil seeds and some tutti frutti.
Variations for Paan Gulkand Sharbat
- If you do not have gulkand/rose petal jam, add 1 tbsp(or more) rose syrup and make PAAN ROSE SHAKE/SHARBAT. Adjust sugar accordingly.
- Add some thandai powder/syrup for THANDAI FLAVOURED PAAN SHAKE.
- Add more chopped nuts like cashew nuts, pistachios and candied cherries.
- In the original recipe by Master Chef Jiggs Kalra, vanilla ice cream is used to make the shake/PAAN SHOTS.
- Top with candied fennel seeds(available at Indian grocery stores).
- You can also add kulfi and falooda noodles to make PAAN KULFI FALOODA.
Storage and Shelf Life
Paan Shake tastes best when consumed fresh on the same day. You can chill it for a couple of hrs. Add basil seeds and ice cream or kulfi before serving.
I never kept it for the next day can't comment whether it stays good.
You can freeze Paan puree(in ice cube trays) and use it as and when required.

Equipment
- Blender
- Measuring Cups and Spoons
Ingredients
- 2 Cups Chilled Milk (Dairy or Plant like Almond)
- 2-3 Paan leaves or more for strong flavour
- 1 tbsp Gulkand/Rose Petal Jam
- 4-5 Soaked and Peeled Almonds
- 1 tsp Fennel Seeds
- Raw sugar like honey,jaggery powder if required
- 1 tbsp Basil Seeds/Sabja
- Vanilla Ice cream for serving optional
Instructions
- Soak almonds in warm water for about 10 mins.
- Also, soak basil seeds and fennel seeds.1 tsp Fennel Seeds, 1 tbsp Basil Seeds/Sabja
- Basil seeds swell up and double up when soaked.
- Wash paan leaves nicely.
- In a blender add paan leaves, peeled and soaked almonds, gulkand, and soaked fennel seeds. You can use the water from soaked fennel seeds.2-3 Paan leaves, 1 tbsp Gulkand/Rose Petal Jam, 4-5 Soaked and Peeled Almonds
- Add a ice cube before pureeing. Blend/grind to a fine paste.
- Add chilled milk and blend.2 Cups Chilled Milk
- Check if more sugar is required.Raw sugar like honey,jaggery powder
- Serve immediately or refrigerate a couple of hrs.
Serving Suggestion
- In a glass, add soaked basil seeds.
- Add scoop of Vanilla Ice cream/ Malai Kulfi.Vanilla Ice cream for serving
