Eggless Cookie Butter Blondies/Biscoff Blondies

Eggless Blondies recipe, loaded with white chocolate chips and with the delicious Biscoff or Cookie Butter.

These Blondies are easy and quick to make and it is so delicious with the flavour burst of cookie butter and white chocolate chips in every bite!!

About the Recipe

Rich sweet with caramel or butterscotch like flavour, here is an easy and quick the best Blondie Recipe. These delicious bars are subtle in flavor that comes from brown sugar and white chocolate along with the added flavors like Peanut Butter or Cookie Butter, Vanilla or Hazelnut or nuts!!

Blondies!! Why these are called Blondies?? This is what my daughter and hubby asked me when they tasted my very first trial of Blondies. I still remember, 4-5 years back while I made Truffles for a client I had some melted white chocolate that I used for coating truffles and cake pops, was left. I didn't want to make any more chocolates using it, so I googled recipes using white chocolate. It was when I discovered this wonderful dessert without chocolate. My first trial of baking Blondies was with Peanut butter and my daughter and hubby totally loved these. Since then I have made these Blondies for my clients, family and friends with different flavors and nuts. Popularly known to many as Brownies without chocolate(dark or milk)or with white chocolate, but for me, these are a dessert with their own deliciousness.

What are Blondies

Blondies are baked dessert bars so much like brownies in texture. These are fudgy, can be baked gooey. It does not contain cocoa powder or milk/dark chocolate. It has characteristic Carmel or Butterscotch kind of flavour from the brown sugar and vanilla.

You can make plain blondies or with various addons like peanut butter and other nut butters, dried fruits and nuts and Biscoff (which is one of our favourite!!)

These Blondies can make a perfect gift for your loved ones. Make it for regular snacking or during make it a part of your Thanksgiving menu, Holiday baking, these can be a nice addition to traditional Indian sweets on festivals like Diwali, Rakshbandhan.

So make these brownies on your special occasion or just like that. Kids will absolutely love these and so do adults. If you are not a fan of Chocolate like me and love caramel/butterscotch flavours then it is the right dessert for your!!

Ingredients to make Blondies with Cookie Butter

Flour- Use Whole wheat Flour or All purpose Flour or a combination of two in ratio 1:1

Butter, Brown Sugar and Vanilla- Give the characteristic caramel/butterscotch flavour to blondies.

Chia Gel- Chia seeds, to make Chia seeds gel is used as the egg-replacer here. It's a wonderful egg-replacer.

Cookie Butter and Biscoff Cookies(optional) for the flavour and crunch.

Others- Baking powder, White Chocolate chips/chocolate(chopped), salt when using unsalted butter.

How to make Blondies with Biscoff

Making these blondies is quite easy. The best thing about this in spite of being egg-free it has a paper-thin crackle on the top.

Prepare a pan, lightly grease it and dust it with flour. Pre-heat oven to 325°F or 162°C.

  1. Make Chia Gel (chia seeds +milk) and keep aside.
  2. Melt together butter, cookie butter, sugar and White Chocolate chips. Add Vanilla Essence.
  3. Add flour and then chia mix to the butter sugar mixture. Add milk as required.
  4. Fold the mixture lightly. Add the chocolate chips or other addons in this step.
  5. Transfer batter to baking pan and bake for about 25 mins. at 325°F or 162°C.
  6. Take out the pan out of oven.
  7. At this point the center will be a bit wobbly and sides will start to separate.
  8. Let the blondies cool completely. Then cut in squares and store in air tight container.
Mix dry Ingredients
Melt in microwave/double boiler
Add brown sugar
Add Biscoff and white chocolate chips
Transfer batter to baking tin

Substitutes in the recipe

  • Use Peanut Butter if you don't have Cookie Butter. Adjust sugar if required as cookie butter has more sugar.
  • In place of White Chocolate Chips use any baking white chocolate.
  • Chia seeds can be replaced with flax meal(grind flax seeds, mix in water and make the flax gel.
  • White Chocolate takes time to melt and can leave fat or seize if overheated, so melt in short intervals of 20-30 sec at a time in microwave. Or, melt on double boiler.
  • Yogurt or buttermilk also can be added if Chia and Flax Seeds are not available. Add 1/4 cup yogurt and add milk carefully if only the batter is thick else omit milk.

FAQ's

What is the shelf life of Blondies

Blondies stay moist and fudgy for 2-3 days when kept at room temperature (cold weather). When the weather is hot refrigerate the blondies. Stays good for a week then become a bit dry.

Can we freeze Blondies

Yes you can freeze blondies. Freeze in a freezer friendly container, stays good for about a month. Thaw or reheat in microwave for 30 sec. on high and enjoy!!

What is the difference between Brownies and Blondies

Brownies have cocoa powder and chocolate (milk/dark). Blondies have caramel/butterscotch flavour which comes with the combination of brown sugar, butter and vanilla.

How to make Vegan Blondies

For Vegan Blondies substitute butter with oil and milk with plant milk like almond/soy milk.

Why my Blondies are dry

Blondie batter just like brownie batter continues to cook even after taking out of oven till it cools down. So, check and take out the pan after 25 mins. . The batter will be a little wobbly in the center but will start leaving the sides. On cooling it will be a bit gooey /fudgy. If we bake for more than 30 mins. then on cooling the batter becomes dry.

So make some delicious Blondies along with other sweets and treats, pack nicely and gift to your loved ones. Best enjoyed without anything but you can always spread some Nutella or some more cookie butter or peanut butter, drizzle with some white chocolate. These stay good for a week out of the refrigerator.

    Now you've got me wondering what cookie butter tastes like. I will have to look for it whenever I visit US. As for the blondies, I once tried the recipe and it failed. Now I have your recipe to follow. Love the idea of using chia seeds to replace eggs.
