Dhaniya Pulao, a flavorful rice preparation with fresh cilantro/coriander(dhaniya) paste, whole spices and vegetables/nuts .
A one pot meal that comes together in few minutes and can be served with any yogurt/curd preparation.
Want a change from your regular Jeera Rice or a everyday steamed rice. Add some fresh Cilantro/Coriander or Dhaniya along with other aromatic spices to rice, for change flavour. A few simple steps and flavorful, wholesome rice dish is ready within minutes. Serve it your guests for your next get together with your special party menu.
Dhaniya Pulao can be prepared be freshly prepared from scratch or with leftover rice . To prepare from the leftover rice, the rice should be dry not mushy or have moisture in it. Here I am giving the recipe for making Dhaniya Rice from scratch.
How to prepare Dhaniya Rice..
Dhaniya Pulao can be prepared in any pan(open pot), pressure cooker(this cuts down the cooking time) and Instant Pot also.
The basic steps for cooking rice, starting from making paste of fresh dhaniya leaves, preparing masala remain the same. For making Dhaniya paste we grind together fresh coriander leaves, ginger, garlic and green chillies.
Rice should be soaked at least 15-20 minutes before preparation. I have added only cashew nuts, carrots and peas to the pulao, you can add any other veggies like beans, cauliflower or potatoes of your choice.
Dhaniya Pulao is a gluten-free dish and is suitable for vegans as this is free of any dairy products. This goes best with any yogurt preparation. For a vegan meal, this can be served with any Dal of your choice like Dal Tadka, Maa Chane Di Dal and many more.
Dhaniya Leaves/ fresh coriander/cilantro leaves are rich in antioxidants and very good for the digestion system. Dhaniya forms a main part of the detox diets. It is a rich source of Vit. C, iron and magnesium. Helpful in blood sugar disorders, cholesterol and losing weight.
Dhaniya or coriander chutney is a favourite of everyone and forms and important part of the everyday meal of most of the Indians. Why not add this to your regular rice /pulao for a flavour change??
Let's see how I prepare Dhaniya Rice..
Dhaniya Pulao
Ingredients
- 3/4 Cup Basmati Rice
- 1 Cup Fresh Cilantro/Coriander leaves
- 6-7 Cashew Nuts
- 1 Carrot
- 1/4 Peas
- 1 Onion(medium)
- 2-3 Garlic Cloves
- Ginger Small piece
- 1-2 Green Chillies optional
- 1 Bay leaf
- 1 tsp Cumin /Jeera
- 1 Cinnamon Stick(small)
- 4-5 Cloves
- 4-5 Peppercorns
- 1 Black Cardamom
- 1-2 tsp Kitchen King Masala Garam Masala
- 1-2 tbsp Vegetable Oil
Instructions
- Wash and soak rice 15-20 minutes before preparing. Chop carrots finely and wash peas. I have used frozen peas, you can use fresh peas.
- Roughly chop onions. Make paste of coriander leaves, ginger garlic and green chillies.
- Switch on the Instant pot on SAUTE MODE. Add oil and when the display shows hot, add cumin seeds and other whole spices. Saute till the spices give aroma.
- Add finely chopped onions, saute till it turns light pink. .Add cashew nuts and saute till onions and cashews turn light golden. Take care not to burn the onions, set the saute mode on medium or low.
- Add the veggies and dhaniya/cilantro paste and kitchen king masala. Mix and cook for 1-2 minutes.
- Cancel the SAUTE mode, add rice, salt and enough of water to soak rice.
- Set the PRESSURE COOK Mode on, close the lid and set the timer to 5 minutes.
- Once the timer goes off, cancel the pressure cook mode, release the pressure manually, check the rice. Fluff lightly with fork.
- Serve hot with the raita or curry of your choice.
To cook in Pressure Cooker Stove-top
- Do the basic preparation of making onion and coriander masala, add vegetables and rice and enough water just to soak the rice. Close the lid and cook till 2 whistles. Switch off the flame and wait till the pressure releases. Open the lid check rice and fluff lightly with fork.
- Serve hot with raita or curry of your choice!!
Notes
- Add water to rice carefully as coriander paste already has some water in it. Rice grains should be separate, just right for the Pulao texture. You won't like to have mushy pulao.
- Cooking Rice in an open pot takes time. If you want to cook in open pot, take a heavy bottom pan, cook rice on medium heat and add water 1/2-3/4 cup more depending upon the rice variety and time you soaked rice.

Make this flavourful rice that is so perfect for kids lunchbox, get-togethers or whenever you want a change from the regular vegetable pulao. The rice is healthy with goodness of coriander, vegetables and nuts. If you want can adapt the recipe as per your choice. If you want a lighter version avoid adding cashews. I keep the spice level to minimum, and have not added red chilli powder, you can add if you want more spicy pulao.
