It is an easy and quick recipe which gets ready with 20 mins. if you have cooked rice in hand.
About the Recipe
With the onset of summers in India, markets are flooded with lot of mangoes varieties. Both Rw Mango and Ripe mango are used in different preparations. From drinks to rice, dal and desserts, mango is so widely used all throughout India.

What is Raw Mango Rice
Raw Mango Rice is made with seasonal fresh raw mango or green mangoes. It imparts a tangy flavour to rice. It is a South Indian Rice preparation and is prepared in different ways in different South Indian states.
Many people use only raw mango in the recipe and many others use coconut along with raw mango.
I followed this recipe from my friend Kalyani's blog, with few changes as per my taste preferences.
Let's now see how I make this tangy Raw Mango Rice Recipe.
Ingredients to make Green Mango Rice
Rice- We use cooked rice in the recipe. You can use leftover rice or make rice separately, cool it completely to use in the recipe. Do not use hot rice, as it has lot of moisture and the final outcome will be mushy rice. I use long grain basmati(which is also traditionally used) in cooking so have used that. You can use any other rice variety also.
Raw Mango- Seasonal fresh raw mangoes are used.
Coconut-Use fresh coconut in the recipe. You can also use frozen coconut if fresh is not available to you.
Spices- Dry Red Chillies, Mustard Seeds, Turmeric Powder, lentils like roasted chana dal, split black lentil(dhuli urad).
Roasted Peanuts- These the crunch and protein to raw mango rice. Roast peanuts before adding to rice.
Herbs- Curry Leaves, Green chilli, Coriander(optional).
Oil- Use coconut oil/Sesame. I have used Rice bran oil. You can also use Ghee if you don't have diet restrictions.
How to make Green Mango Rice/Mavinakayi Chitranna
Preparations for Raw Mango Rice
First step in making raw mango rice is cook rice. I already had steamed rice.
Checkout Steamed Rice Recipe (Instant Pot) and Steamed Rice (Open Pot/Pan).
Many recipes add grated mango in the recipe. I have made a coarse paste of coconut and raw mango to use in the recipe.
- I had fresh coconut chunks so I firstly pulsed it coarsely in grinder and then add raw mango slices/chunks along with green chilli to get a coarse paste.
- Roast peanuts in pan. Add 1-2 tsp oil and roast till the rawness of peanuts goes away and these get crunchy.
Temper Rice
- Heat oil in a pan. Traditionally Sesame Oil or Coconut Oil is used in South Indian Cuisine, but I have used Rice Bran Oil. You can also use Olive Oil.
- When oil is hot add mustard seeds, when seeds crackle add lentils, saute for few seconds and then add curry leaves.
- Add the coconut raw mango paste and cook till it starts giving oil Keep the flame to low and keep on stirring the paste as it may get burnt at the bottom.
- When the paste starts leaving oil, add rice and lightly mix rice and cooked paste. Take care that rice should not get mushy.
- Serve hot. You can top it with few chopped raw mango pieces and roasted peanuts.
Serving Suggestions
Serve Raw Mango Rice with any raita of your choice, papad and pickle or chutney. I love serving Raw Mango Rice with Chass, Boondi Raita, or plain curd. It also goes well with Lauki Raita, Cucumber Raita and Ash Gourd Raita.

Yes to can skip coconut from the recipe and add only grated raw mango.

Ingredients
- 1 Cup Steamed Rice
- 1 Raw Mango(small) , garted/sliced, or 1/4 cup
- ¼ Cup Coconut Chunks or grated coconut
- ¼ Cup Peanuts or Roasted Peanuts
- 2 Whole Dry Red Chillies
- 1-2 Green Chillies(optional) or as required
- 7-8 Curry Leaves
- 1 tsp Mustard Seeds Black
- 1 tbsp Mixed Lentils Roasted Chana Dal, Urad Dal
- ¼ tsp Turmeric Powder
- 1 tsp Jaggery Powder
- Salt as per taste
- 1-2 tbsp Oil
- Chopped Coriander for Garnish
Instructions
- Prepare steamed Rice. Or, if you have already precooked rice use it in the recipe.
Make Raw Mango and coconut Paste
- Take Coconut chunks in a grinder. Pluse it 2-3 times. It will resemble grated coconut.¼ Cup Coconut Chunks or
- Now in the same grinder, add raw mango cubes/slices. Keep aside 3-4 pices to add while serving rice.1 Raw Mango(small) , garted/sliced,
- If using grated coconut in the recipe, add together all the ingredients to make paste.
- Add 1 dry red chilli and 1-2 green chilli.2 Whole Dry Red Chillies, 1-2 Green Chillies(optional)
- Grind to a coarse paste.
Cook Raw Mango Rice
- Add 2 tsp oil and roast peanuts till the rawness goes away and peanuts get crunchy.¼ Cup Peanuts, 1-2 tbsp Oil
- In the same oil, add mustard seeds, when seeds crackle add lentils, saute for few seconds and then add curry leaves.1 tsp Mustard Seeds, 1 tbsp Mixed Lentils, 7-8 Curry Leaves
- Add the coconut raw mango paste and cook till it starts giving oil Keep the flame to low and keep on stirring the paste as it may get burnt at the bottom.
- When the paste starts leaving oil, add turmeric powder, salt and jaggery powder.Mix nicely.¼ tsp Turmeric Powder, 1 tsp Jaggery Powder, Salt as per taste
- Now add rice and lightly mix with the cooked paste. Take care that rice should not get mushy.1 Cup Steamed Rice
- Serve hot. You can top it with few chopped raw mango pieces and roasted peanuts and garnish with chopped fresh coriander.Chopped Coriander
