Mix Veg. Raita is a flavorful combination of mixed salad veggies in thick beaten curd/ yogurt flavored with roasted cumin powder and chaat masala.
Mix. Veg. Raita or Mixed Vegetable Raita, is one of the most popular Raita that is served as a side to pulao, biryanis or paranthas and goes well even with stuffed kulchas. Fresh mint leaves add more freshness to it.
What is Raita
Raita is a thickened yogurt preparation with added fruits or salad vegetables. It is one of the best accompaniment with any meal combination. Chilled bowl of Raita with fresh vegetables or fruits is a wholesome meal that soothes the body from outside heat.
To make Raita, always use fresh curd/yogurt. In India yogurt is known as Curd not be confused with the Cheese Curds that we get in many countries. If you feel yogurt is little sour, you can add a tsp of sugar or any natural sweetener like honey or maple syrup to it.
Raita tastes best when served chilled. Some crushed fresh mint or coriander leaves always add on to flavour of raitas.

What we need to make Mix. Veg. Raita
Fresh Plain Yogurt, fresh salad veggies like cucumbers, beetroot, tomatoes( can take cherry tomatoes also),onions(optional), carrot, fresh mint and cilantro/coriander leaves. Roasted Cumin Powder, Chaat Masala and Black Salt enhance the taste of raita and also add on to the digestive properties of Raita.
There is no specific measurements for the making Mix Veg. Raita. Add veggies as per your preference and quantity. I add finely chopped cucumber, tomato, onions, carrots, beetroots. I ran out of coriander leaves, so didn't add to it. You can add a tbsp of finely chopped coriander. I prefer to add grated carrots to raita.
You can make roasted cumin powder at home. In a pan dry roast 2-3 cumin seeds(you can take more) on low flame till it gives aroma and starts turning light brown. Take it off the flame and transfer to another bowl. When cumin seeds are cool , grind in a coffee grinder or crush coarsely with a rolling pin in a ziplock bag. Store in an air-tight bottle for use.
Chaat Masala is an Indian Spice mix, available at Indian Grocery stores or you can order it from amazon.
Let's see in detail how to make Mix. Veg. Raita
Ingredients:
- Thick Yogurt/Curd--1 cup
- Cucumber--1 small
- Onion-- 1-2 Tbsp(finely chopped)
- Tomato--1-2 Tbsp(finely chopped)
- Carrot--1-2 Tbsp (grated/finely chopped)
- Fresh Mint Leaves -- 3-4
- Finely chopped Fresh Coriander Leaves
- Roasted cumin powder--1 Tsp
- Chaat Masala-- 1 Tsp
- Sugar/Honey -- ½-1 Tsp
- Salt or Black Salt(Kala Namak) to taste
Method:
- In a bowl beat yogurt/curd, add cumin powder, chaat masala, sugar and salt. Add all the veggies and crushed mint leaves, add little water if you want to adjust the consistency.
- Mix well and chill before serving with your favorite biryani, pulao or any of the meals.
Make this refreshing yogurt preparation as appetizer or side dish with your meals. I love to have this raita in summers if I don't feel like having anything. You can make this when you are fasting, add sendha namak to it, omit onions and add veggies as per your preference.
Do make this refreshing raita with your pulao, biryanis, khichdi , any lunch or dinner menu. It is very refreshing to have it just like that if you want to have something light in hot summers.
