Besan ke ladoo/Besan Badam Ladoo is one of the popular Indian Mithai or sweet/dessert, that is made with roasted chickpea flour/gram flour in ghee(Indian Clarified Butter) and sugar.

Add handful of Almonds/Badam for a nutrient pack treat. It is an all time favourite dessert that we make traditionally on every festival, or pack to our college going kids tuck!!

Besan ke ladoo, a beloved Indian dessert made from roasted chickpea flour, ghee, and sugar, is perfect for any occasion. Adding almonds enhances its nutrition. These ladoos are easy to make and provide health benefits like protein and improved digestion. They are ideal for quick snacks or breakfast, especially during winter.

Making besan ke ladoo needs no special occasion, you can prepare these any time of the year and relish whenever you have sweet cravings. With a glass of warm milk these are perfect and wholesome breakfast for busy mornings or an evening snack, for your kids and teenagers who are always rushing off and have no time to sit for breakfast.

Health Benefits of Besan aur Badam Ke Ladoo

  • Chickpea flour is a good source of protein, improves digestion, reduces inflammation, and prevents obesity, among others.
  • These is also gluten-free and suitable for those on dietary restrictions.
  • Besan ladoo with almonds provide protein to the body along with good fats in ghee. It also helps the body to beat freezing temperatures especially for vegetarians who do not eat meats and eggs.
  • Desi Ghee nourishes the body and bones, good for hormonal balance in the body and a rich source of Vit. K!! A considerable amount of ghee goes into the preparation of these ladoos but then it is required for the growing kids and for grown-ups too in moderation.
  • During winters you can add powdered or finely chopped nuts like Almonds, Walnuts, Sunflower or Pumpkin Seeds and Cashew nuts along with the flour so that the kids can have a power-packed snack.

This recipe of besan ladoos is passed on to me from my mom and grandmom(dadi). My mom's besan and atta ladoos are still the best in the world for me and my sister!

How to make Besan Ke Ladoo

Ingredients to make Besan Ladoos

Chickpea/Gram Flour- Use Ladoo Besan/Mota Besan or the one labelled for making ladoos. It gives more grainy texture.

Almonds and Melon Seeds- Melon seeds/Magaz is traditionally added to besan ladoo. I also like to ad roasted and coarsely grinded almonds to add the nutrition. You can add other nuts like cashew nuts, walnuts or seeds like pumpkin/melon seeds.

Desi Ghee- No replacement for Desi Ghee.

Sugar-In India, traditionally people add Bura or Boora/Tagaar as sweetener. You can add fine castor sugar if burra is not available. You can also add other organic sugar like Coconut Sugar or jaggery powder.

Cardamom Powder- To flavour ladoos, this is optional.

Tips to make perfect Besan Ladoo

You can very easily make Besan Ladoo at home, no special techniques are required.

  • Use Moota Besan or Ladoo Besan to make ladoos. It gives a more grainy texture.
  • The only thing that we need to be careful is roasting besan/Chickpea flour. Many people roast the flour with ghee and many without ghee and then add ghee later. I roast the flour halfway on slow flame till it gives the aroma and just when it starts turning to light brown, I add ghee to it.
  • Sugar should be added to the ladoos when the flour and ghee mix is warm enough to touch. Adding sugar in hot besan can make it runny and difficult to set. Though you can set the flour in form of barfi(fudge), it won't be able to hold the shape of ladoo (ball).
  • Traditionally Boora( a very fine quality sugar used for making traditional Indian sweets and desserts) is added to ladoos in place of sugar, many times Boora is not available in Indian grocery stores(in US and outside India),you can use fine castor sugar.

How to make Besan Ke Ladoo

  • Dry roast besan on a slow flame in a heavy bottomedย pan or kadhai.
  • When the aroma startsย to come and the flour starts to turn light brown, add ghee to the flour and roast flour till it turns golden brown.ย 
  • Take out the roasted flour in another bowl, and keep it to cool down.ย 
  • Meanwhile, dry roast melon seeds, almonds or roast in tbsp of ghee. Finely chopย or coarsely grind almonds when cool.
  • When the roasted besan and ghee mixture is just warm enough to touch, add sugar and chopped nuts to the roasted flour. once the flour is just warm enough to touch. Also, add cardamom powder if using.
  • Shape into desired size ladoos(balls). You can garnish with melon seeds or finely chopped pistachioย or slivered almonds.
  • Keep ladoos in open for 3-4 hrs will cool down properly and hold the shape nicely.ย

Storing and Shelf life

Besan Ladoos can be stored at room temperature in airtight containers. It stays good for 2-3 in cool climates.

Ingredients
  

  • 2 Cups Besan/Chickpea flour
  • 1 Cup Fine Castor Sugar or add boora if available
  • 1 Cup Desi Ghee
  • 1/2 Cup Almonds finely chopped or powdered
  • 1/4 Tsp Cardamom Powder optional

Notes

  • Add more ghee if the flour looks dry while roasting.
  • If accidentally you added more ghee, take out the extra ghee by carefully tilting the pan to one side. Collect ghee that runs towards the inverted side in a bowl.
  • Adjust the quantity o sugar as per your taste. You can add 1.5 cups of sugar if you like sweeter ladoos.
