For the past few years Chilli Crisp has gained so much popularity all over the world. We can see so many brands of Chilli Crisp lined in market aisles. I recently tried it at home referring to various online recipes and then finally customised to our taste preferences. And, here I am sharing the recipe of this wonderful flavourful condiment.
This is the best Chilli Crisp recipe you will ever need, so much better than the store bought one. Trust me it is going to be your favourite condiment recipe once you try it.
What is Chilli Crisp
It is an infused oil with crunchy bits made by simmering onions, garlic and spices like cinnamon, star anise, cardamom, peppercorns and cloves in oil. The infused oil is then poured over chilli flakes which adds to the heat and thus the name Chilli Crisp.
Many add fresh peppers in the oil while other use chilli flakes in the recipe. I like to use store bought Chilli Flakes along with Gochugaru Hot Pepper Powder which adds more flavour and heat to the crisp.
Chilli Crisp has an addictive umami that adds flavour and taste to anything savoury from main course, soups, breads or snacks.
Why should I make Chilli Crisp at home
Though we have so many good brands in the market but now I find it better to make it at home as:
- It is budget friendly, a lot cheaper than the store bought ones.
- You can control the heat, use the pepper of your choice.
- You know what oil you are using in the recipe.
- Make it msg free at home as many brands add msg.
- You can skip the ingredients whichever you are allergic too like peanuts, sesame seeds.
What is the difference between Chilli Crisp and Chilli Oil
Chilli Crisp has crispy bits of onion and garlic. Spices like star anise, bay leaf, cinnamon and other ingredients like soy sauce are/can be added to it.
Chilli oil is usually made with only pepper flakes. You can also use filter the oil from Chilli crisp as Chilli oil. Use the crispy bits of onion and garlic as topping over noodles, fried rice, pasta or to make any king of curry masala.
Ingredients for Chilli Crisp
Oil- I use rice bran oil as it has neutral flavour. You can use peanut oil or corn oil or any other plant based oil.
Spices- Star Anise, Cinnamon, Black Peppercorns, Cloves, Bay leaf.
Red Chilli/Pepper flakes and Gochugaru hot pepper powder for the heat. You can also add smoky paprika.
Onion and Garlic- 1 medium onion (you may add more) and lots of garlic.
Sweetener- Maple syrup or use any sweetener. This is optional, I like the hint of sweetness in the recipe so add very little amount just 1 tsp for 1 cup oil.
Sesame Seeds for the crunch. You may add toasted/fried peanut or soy granules as used in traditional Chilli crisp recipes.
Other ingredients- Many people also add Soy Sauce, Mushroom powder and Msg om the recipe. But I skip it as I use Chilli crisp on my Indian dishes also like dals, khichdi, pulao etc. There are recipes that add orange peel or zest.
What are best chillies used in the recipe
Many people use fresh chilies like serreno, habaneros but I skip it. I use store bought Red Chilli Flakes. You can use dried chile de abrol or Indian varieties like Kashmiri Red Chillies or Guntur Chillies (for a more spicy kick).
Many recipes use Red Bell Pepper to keep the heat minimum.
How to make Chilli Crisp Oil
- Toast sesame seeds on low flame till light brown. If using peanuts, roast and lightly crush it.
- Thinly slice onions and finely chop garlic. Try to chop in uniform size.
- In a bowl add red chilli flakes, gochugaru pepper powder, maple syrup, toasted sesame seeds and salt.
- Add oil in a pan or pot and then add chopped onions, garlic and spices(cinnamon stick, bay leaf, star anise, cloves and peppercorns).
- Simmer on low flame till onions and garlic start turning brown. It will take around 20-25 mins. Also, keep on stirring for uniform cooking.
- When the onion and garlic are done, carefully strain and transfer the oil in the pepper mix and let the onion and garlic cool a bit. Reserve the fried onion and garlic set them aside to cool completely. Cooling further makes the onion and garlic more crisp.
- Then add the onion and garlic bits in the oil. Take out bay leaf and can keep or discard cinnamon, star anise, cloves and peppercorns.
- You Chilli Crisp is ready.
Storing Chilli Crisp and Shelf Life
Store Chilli crisp in a gar bottle or jar with a lid. The bottle or jar should be completely dry.
Chilli Crisp stays good for about a month. You can refrigerate it for longer shelf life.

Chilli Crisp is a very versatile condiment you can use it on salads, soups, breads, pizza, in pasta, fried rice, chowmein, roasted vegetables, stir frys and many more.

Ingredients
- 1 Cup Oil any neutral plant based
- 1 medium Onion
- 15-20 Garlic Cloves
- 2 tbsp Red Chili Flakes
- 2 tbsp Gochugaru Pepper Powder or paprika or kashmiri red chilli powder
- 1-2 tbsp Sesame Seeds
- 1-2 Bay Leaf
- 1 stick Cinnamon
- 1-2 Star Anise
- 1-2 Black Cardamom
- 4-5 Peppercorns
- 4-5 Cloves
- Maple Syrup or any sweetener (sugar)
- 1/2 tsp Salt
Instructions

- Finely slice onions and garlic. Try to keep the size uniform. You can use a mandoline slicer or food processor.
- In a bowl add red chilli flakes, gochugaru pepper powder, maple syrup and toasted sesame seeds.2 tbsp Red Chili Flakes, 2 tbsp Gochugaru Pepper Powder, Maple Syrup
- Add oil in a pan or pot and then add sliced onions, garlic and spices(cinnamon stick, bay leaf, star anise, cloves and peppercorns).1 medium Onion, 15-20 Garlic Cloves, 1-2 Bay Leaf, 1 stick Cinnamon, 1-2 Star Anise, 1-2 Black Cardamom, 4-5 Peppercorns, 4-5 Cloves, 1/2 tsp Salt, 1 Cup Oil
