About the Recipe

Kesar Badam Doodh is one of the most popular and heatlhy Indian beverage made with almonds and flavoured with saffron and cardamom.

Kesar is Saffron, Badam is Almond and Dooh is Milk in Hindi.

It is a very delicious milk preparation is also made during festivals. People also consume it during fasting days like in Ekadasi, Navratri and Shivratri.

It gives instant energy and is also loaded with healthy friendly ingredients.

Benefits of Kesar Badam Doodh

This is an ancient beverage which is also used for therupetic purposes, popular in North India. It is given to kids and physically weak people for strength, building immunity.

In summers it is also sold by street vendors which gives instant relief from the scroching heat. Nowadays we get packaged bottles of Badam milk in stores also.

The ingredents used in the recipe (Almonds, Milk) are rich in protein, calcium and other nutrients. Almonds is rich in antioxidants, has Vit. E and minerals, strengthens the bone, is good for overall health, benefits eyesight.

Dairy Milk (from cows and buffalos) is one of the richest source of calcium, loaded with immune boasting nutrients, boasts in energy levels, improves the skin and hair.

Sipping on hot badam milk before sleeping, helps in a good night sleep.

Benefits of Saffrorn

Saffron is the most expensive spice in world. It has numerous health benefits. Saffron threads are loaded with antioxidants, it is believed to have anti-depressent and anti cancer properties. It is very good for skin and may also help in PMS symptoms. It should be consumed in moderation as it may also induce heat in body.

Why we love Homemade Kesar Badam Milk

Homemade Kesar Badam milk is preservative, starch free.

We use fresh organic ingredients to make it at home.

We can control the amount of sugar as per our requriement.

It is healthy, delicious and so easy to make.

Ingredients to make Kesar Badam Milk

Badam/Amonds- Use the best quality almonds in the reicpe. Do not use rancid or old almonds. It will spoil the taste of this delicious milk.

Saffron/Kesar- Adds a beautiful yellow hue to the milk and light flavour. Always buy saffron from trusted sources as these days lot of adultrated saffron is also availabe in market. It is one of the costiliest spice. So, you can also skip it if you don't want to use it in the recipe. You can use turmeric.

Milk- Dairy milk is usually used in the recipe since anceint time. But nowadays lot of people have lactose intolerance and allergies. You can use any plant based milk (Almond Milk, Cashew Milk) but taste may differ and will have slight flavour of the ingredient from which the milk is prepared. Coconut milk will have more of nutty coconut flavour.

Sweetener- To sweeten the milk I have used powdered candy sugar(mishri) which is an organic and raw form of sugar. You can use raw cane sugar or even castor sugar.

Other- Cardamom Powder.

How to make Kesar Badam Milk

  • To make Badam Milk we need soaked and peeled almonds. You can soak alomds overnight (6-7 hrs) or about 30 mins. in hot water.
  • Grind to fine paste, add little water if required.
  • Boil milk and then add almond paste, cardamom powder and saffron milk. Cook it for few minutes.
  • Cool completely and refrigerate for couple of hrs. to serve chilled. Or, serve it hot.

Serving Suggestions

Serve it hot or chilled.

My kids, sometimes also love add a scoop of vanilla ice cream.

You can some drops of rose water for additonal flavour.

Tips to make Royal Badam Milk

Preferably use full fat milk.

Do not add saffron in boiling milk. Add it to lukewarm milk to get the color and flavour. Add saffron milk to boiling milk.

Simmer milk on low flame after adding almond paste. It tends to get more rich and creamy when cooked on low flame.

How long does Kesar Badam Doodh stays good to consume

Badam Milk stays good for about 2 days when refrgerated properly.
Store in glass bottles and have it directly if you want it chilled. Reheat in pan if you want it hot.

Can I use Almond meal or Almond Flour to make Badam Doodh

Almond flour can be used to make kesar badam doodh. Make sure the flour is not very old and not have an aftertaste or rancid. Soak it in lukewarm water or milk for 5 mins.Then blend it in a grinder for fine texture. Add to boiling milk stir well and cook for few mins.
Almond meal has almond peel also so I won't recommend using it for the recipe.

Equipment

  • Pan

Ingredients
  

  • 500 ml Milk Full Fat Milk(preferably)
  • 15-20 Almonds
  • 10-15 Saffron Strands
  • 1 tsp Cardamom Powder
  • Sugar as required

Instructions
 

  • Soak almonds overnight or for 4-5 hrs.
  • Alternatively, you can also soak in hot water for 30 mins.
  • Soak saffron in warm milk for 15-20 mins.
  • When ready to make peel almonds.
  • Grind to fine paste. Add 1-2 tbsp milk or water
  • Keep milk to boil. When the first boil comes, lower the flame.
  • Add almond paste, saffron milk and cardamom powder.
  • Simmer and cook for 10-12 mins. Keep on stirring milk so that it soesn;t burn at bottom.
  • Serve it hot.
  • To have chilled milk, cool it competely. Refrigerate it for a couple of hrs.
  • Serve it garnished with more chopped almonds. You can also add chopped pistachios or cashewnuts and dried rose petals.

Preferably use full fat milk.
