Make tasty, healthy and delicious Lauki Badam burfi recipe without any mawa/khoya.

Lauki Badam Burfi

Here I am today sharing a special dessert recipe from North India, made with Bottle Gourd/Lauki.

I won't say it a low calorie dessert(as it has almonds and nuts) but yes it is healthy as compared to other sugar and khoya laden ones. Adding milk powder and almond meal makes up for the khoya. The recipe comes handy when you want to prepare some quick dessert and khoya is not availabe in markets. Especially during current situation when lockdowns imposed for people's safety and health concern.

Lauki Ki Burfi is also known as Lauki Ki Launji in North India especially Uttar Pradesh, Haryana. It is made with Bottle Gourd/Lauki, Khoya(evaporated milk solids), sugar and dry fruits.

This Lauki Badam Ki Burfi is-->

  • Made without using any Khoya
  • Gluten-free
  • Can be consumed during fasting days

In my version I have used almond meal(homemade), milk, raw cane sugar and milk powder along with milk.

In US and other countries Khoya/Mawa is not easily availabe. I never liked the one that was availabe in stores their (my personal opinion). So to make Indian Khoya based desserts I always used milk powder or made khoya at home. Both ways the desserts taste as good as the authentic ones.

Gulab Jamun, Mathura Ke Ladoo, Kesar Pista Burfi and many more are the desserts that I have made using milk powder.

Lauki/Bottle Gourd and it's Culinary uses

Other names of this gourd are Calabash gourd, White-flowered gourd, New Guinea bean, Tasmania bean and long melon.

Bottle Gourd is a one of the healthiest vegetable and is very good for summers, as it has cooling effect on body. Many people do not like to have it in their meals. I love this summer vegetable and like to use it often in my cooking.

In Indian Cuisine especially in North India it is used in making different dishes. You can make curries, add in raita or stuff in parathas and in batter of Chillas or savory pancakes.

Lauki dishes can also be consumed during fasting days.

Lauki Ki Subzi, North India Style(no onion garlic) is one of the most simplest, light on stomach and delicious vegetable that you can make for your meals.

You can also add lauki with lentils to make comforting curries for main course. One of my favourite is Lauki Chane ki Dal or make healthy savory snack for tea time Doodhi Muthiya.

Let's see how to make Lauki Ki Burfi

Lauki Badam Burfi/Bottle Gourd and Almond Burfi

Ingredients to make Lauki Badam Burfi

Lauki/Bottle Gourd- Choose soft and fresh bottle gourd. To make burfi, peel bottle gourd and remove the inner flesh that has seeds.

Almonds- Powder Almonds to add in the burfi. It adds a rich texture to the fudge. You can also use store bought Almond Meal.

Milk Powder and Milk- Add richness and creaminess to burfi.

Sugar- I have used Raw Cane Sugar, you can use castor sugar also. Or add jaggery powder, but the burfi will have dark color due to the color of jaggery.

Ghee- We use desi ghee to make sweetmeats. In controlled amounts desi ghee is good for health. Do not use too much of ghee in the recipe, as it will spoil the texture of burfi and it won't set properly.

Cardamom Powder for flavour, Finely chopped Almonds and Cashew nuts for garnish along with rose petals(optional).

You can also add rose essence for the flavour.

Ingredients for Lauki Badam Burfi

How to make Lauki Ki Burfi

Lightly oil a dish or tin. You can line with parchment paper(optional).

Grind almonds to fine powder and keep aside. If using almond meal skip this step.

Finely chop 2 tbsp of almonds and cashewnuts and keep for garnishing.

Peel lauki and then cut vertically from middle.

Remove the inner fleshy part/pith with seeds.

Then in food processor or mandoline finely grate it. Do not leave grated lauki for long as it starts turning black.

If your lauki is very watery then squeeze out extra water. You can keep this extra water to knead chapati or bread dough.

Cook lauki with 2 tsp ghee on low flame, stirring it till the water evaporates.

Then mix milk powder with milk and add to lauki. Keep on stirring it till lauki is cooked and the mixture starts getting thick.

Now add almond meal and sugar, mix with lauki milk mixture and keep stirring it, till it starts to thicken and forms a lumpy dough like.

Now transfer it on the greased try lined with parchment paper. Spread it uniformly and then sprinkle finely chopped nuts. Cover it and keep it to set for 4-5 hrs.

Finally once the fudge/burfi is set cut in pieces and keep in an air tight container. It stays good for 1-2 days at room temperature and 4-5 days when refrigerated. Do not freeze.

Variations-

For low calorie Lauki ki Burfi you can skip almonds and add another 1 cup milk and 1/2 cup milk powder. It will take longer time to cook.

Otherwise you can add powdered melon seeds. These also will add richness to the burfi.

  • ½ Cup Milk Powder

    Lauki burfi looks so yummy .have always used lauki for halwa but next time lauki barfi is certainly on the cards !! The almonds and milk powder make it absolutely rich and lipsmacking.

    Lauki ki barfi looks delish Swaty. Its a great idea to use milk powder instead of khoya. I also use homemade khoya but I think milk powder is more convenient. Beautiful click.
